Ernest Jones' text is quoted in The Common Muse (V. de Sola Pinto and A. E. Rodway (1957), with what I take to be the original tune direction: Music by John Lowry. This Song can also be sung to the air of "The Monks of Old". This would appear to suggest that it was originally published with music.

In the Tolpuddle martyrs play by Miles Malleson, it was sung to "Kingsfold" (similar, but not identical to the "Star of the County Down"). But as far as I know, the author hasn't left any information of what he would like it sung to: I would say sing to whatever you like.

"While Shepherds Watch'd -- Canterbury tune, Evison, 1751, also known as Otford and found in Hardy and other MSS," according to the photocopy I have. Not that that may be of much use, but maybe to someone, sometime... :-)
