a spoon of pb, a spoon of choc icecream. straight in the mouth. yum. pb with honey and lots of butter on thick white bread. All time comfort food. pb on apple to make me think of mum and snack time. under no circumstances- fresh pb from local health store. yuuuuuuuuuckkkkk! childhood nightmares returning! oh, and pb with soy and honey as a hot peach and lettuce salad dressing. mmmmmmmmmmm

On 20 Apr 04 - 03:46 AM I mentioned a quick and easy recipe:

"One of my favourite home made fudge-type recipes is Peanut Butter Honeys, which is just a combination of warmed honey with peanut butter and rice bubbles added. Leave to set in frig."

I haven't made it for many years but I thought about it out of the blue and had to make some.

Hubby & I have both been making our own chocolate treats for a few years using 70% cocoa cooking chocolate which has less sugar than the usual brands but a really good chocolate flavour. The brand we use is Plaistowe but that might not be available outside of Oz.

So then, having made the PB & honey fudge I decided to put it in some chocolate bars. Indescribably yummy! A definite yes for future chocolate experiments.

Note: I have converted Hubby to PB & marmalade but he still hasn't tried (i.e. seen the light about) PB & banana or PB & lettuce sandwiches. BTW he makes marmalade from the grapefruits on our tree.

Ok, here is the recipe for Peanut Butter Honeys from a magazine I read way back in 1980.

3/4 cup peanut butter (Note: I use crunchy PB)
1 cup honey (Note: I use about half a cup)
pinch of salt
2 + 1/2 cups of rice bubbles

1. Mix together PB, honey & salt, cook over gently boiling water, stirring constantly until well blended. (Note: I just heat it in a saucepan on a very low heat and stir. It doesn't take very long.)

2. Remove from heat, stir in rice bubbles.

3. The recipe says to spoon it into paper sweet cases but I just put it in a slice tin, smooth it into an even layer of about 2.5 cm/1 inch high and slice it when it has set in the frig. It also says to put half a glace cherry or angelica on each portion but I never bothered doing that.

Chill until firm then eat and enjoy.

I would say it is a healthy treat except it is extremely moreish so I have to stop myself from eating too much. Even more moreish when thrown into melted chocolate and divided into portions or a layer and chilled until set.

Question: how on earth do people with peanut allergies make it through life without being bored of food? I know there are nut butter substitutes like cashew butter but the flavour is not quite the same as peanuts.

MaJoC's Horrendous Peanut Butter Sandwich:

2 slices brown bread*
1 scrape each of Peanut Butter and Marmite†
1 thinnish slice of cheese
Butter to taste

Butter both slices (one side each).
Add peanut butter to one slice, and Marmite to the other.
Place cheese between slices.
Fend off offended spouse, and consume sandwich.
Bliss out on the taste explosion.

* I can't stand cotton wool masquerading as white bread.
† Vegemite and Bovril are available in other juristictions.

PB & Vegemite (or that other M-word stuff which I have only tried once in my life)? Hmm? It doesn't sound tempting to me, although Sandra in Sydney mentioned PB & V on 19 Apr 04 - 09:47 AM.

I'll get back to you on that. The cheese might help.

Grapefruit marmalade sounds wonderful!

I think in our poverty days when I was in junior high school it was peanut butter and apple butter on slices of bread. Pretty bland, but it was calories.

I haven't tried apple butter, but I have a vague memory that my Mother used to eat PB & apple slices on bread.
