does anyone know any good mead recipes or, failing that, where i can get hold of some? i met someone a few days ago who said she had made some that was drinkable and remarkably alcoholic within a month but couldnt remember the recipe. if anyone knows one like that for impatient people like me, even better! thanks, love ivy b.

I've heard that true mead takes about seven years to mature because bees put an enzyme in the honey to stop it fermenting.

I have purchased a very good desert mead at a local internaltional foods place. I believe it was called Chaucer Mead. I really enjoyed it, but it might be too sweet for some. Look in upscale wine shops. Cost me about 12 bucks for a bottle.

I also have a friend who makes incredible mead. Dry, but not too tart. He is a vintner by trade, and has made mead wine and even mead brandy, which was clear as spring water and lit me up like the fourth of july! His best stock is now pushing 10 years old, but the first time I tasted it it was only a year young--but delicious nonetheless.

A serviceable mead can be made (hmmm...mead/made) in about 8 weeks. I have tasted this kind of mead once and it left something to be desired. I might be able to put my hands on a recipe or a link to one. Might take a day, though.

Anybody else? Beuller? Beuller?

Mead is a tradtional drink in the Horn of Africa. You can get it at most Ethiopian Restaurants, those of you lucly enough to be near one. As usually served there, it is much drier than you would expet for something made from honey and is amazingly refreshing with spicy food.

You might want to take a look at the book Mad About Mead by Pamela Spence (Llewellyn Publications ISBN 1-56718683-1) This is good book for beginning brewers, written by a beekeeper & brewer. It covers the history, and gives step by step instructions on making mead. Good luck
