Well I have always taken it to mean that it was one that the named person is known to play, likes or 'fancies'?

I had always heard thatb a fancy was a favorite or show piece of a particular musician.

In North East England a fancy was always a favourite. The term is also used by tipsters forcasting what will win horse races . Another way it was used was if a maried woman had a boyfriend on the side he was called a "Fancy Man" Cheers Bill
