Subject: BS: Cranberry harvest time From: GUEST,mg Date: 10 Oct 08 - 07:06 PM Today is the day for cranberry harvest..plus maybe a couple more. It does not take long. Not probably going to be a great year here...season was too cold. But still it is lovely. mg |
Subject: RE: BS: Cranberry harvest time From: Stilly River Sage Date: 10 Oct 08 - 07:42 PM A favorite dessert of mine appeared in Martha Stewart Living a couple of years ago. It's called New England Cranberry Duff and it is a thin cake with cranberries and roast pecans on top. Mmmmmmm! SRS |
Subject: RE: BS: Cranberry harvest time From: mg Date: 10 Oct 08 - 09:43 PM Sounds good. I had a salad at the local fair here with Craisins, mixed greens, feta cheese and pecans and some sort of vanilla vinagrette..it was lovely. My boss had brought in some pears from his tree..I should have added that...pears and cranberries go very well together. mg |
Subject: RE: BS: Cranberry harvest time From: Stilly River Sage Date: 11 Oct 08 - 12:58 AM I have a friend who is working to invent a good pie recipe to enter in the State Fair of Texas next week. He'll be baking this weekend. I suggested maybe a riff on the Duff recipe would be nice. Any other fruit combinations you think are good with cranberry? He may not use it, but I could hear a little intake of breath when I suggested it, like maybe I had his attention. . . Nov. 2005 See if this works or search on "New England Cranberry Duff" at Martha Stewart Living. SRS |
Subject: RE: BS: Cranberry harvest time From: mg Date: 11 Oct 08 - 03:03 AM chcoolate goes great..orange, hot peppers like in jelly...other berries...cranberry juice mixed with pineapple juice does not need extra sweetening..very good. Most fruit juices are great. Pears, apples, etc. mg |
Subject: RE: BS: Cranberry harvest time From: Ebbie Date: 11 Oct 08 - 12:05 PM A friend brought something unusual to a music party. She had rolled whole cranberries into egg white and then into confectioners sugar then dried on waxed paper. The burst of tartness inside a thin coating of sweet was tasty and fun. |
Subject: RE: BS: Cranberry harvest time From: Stilly River Sage Date: 11 Oct 08 - 12:34 PM Thanks, Mary! He has been trying to come up with something that uses pineapple! SRS |
Subject: RE: BS: Cranberry harvest time From: RangerSteve Date: 11 Oct 08 - 01:33 PM I add diced apples to my cranberry sauce, or a diced quince if I can find one. Pineapple works, too. So do those canned mandarin oranges. |
Subject: RE: BS: Cranberry harvest time From: Irene M Date: 11 Oct 08 - 01:40 PM I do cranberry applesauce and freeze it. Yummy. As I am working my way through some of the 116lbs of apples I picked the other day, it is fresh in my mind. The cranberries were frozen last winter. |
Subject: RE: BS: Cranberry harvest time From: open mike Date: 11 Oct 08 - 09:42 PM AU CONTRAIR-- the best recipe for cranberries is susan stamberg's mother-in-law's.. it is on NPR every year.. Mama Stamberg's Cranberry Relish 2 c raw cranberries 1 small onion ½ c sugar ¾ c sour cream 2 Tbsp horseradish You can use your food processor for this. Grind the cranberries and onion together. Add remaining ingredients and stir in. Put in a plastic container and freeze. Thanksgiving morning (or even the night before), move the container from the freezer to the refrigerator compartment to thaw (it should still have some little icy slivers left). The relish will be thick, creamy, and shocking pink. Makes 1½ pints |

Subject: RE: BS: Cranberry harvest time From: Bee Date: 11 Oct 08 - 10:37 PM I'll be picking cranberries with a friend this coming week. Takes about three or four fun hours just back of a beautiful local beach to gather enough for a year and for a whole lotta give-aways. I like making either pie or upsidedown buscuit with apples and cranberries - the tart berries with the blander apple flavour is awesome. |
Subject: RE: BS: Cranberry harvest time From: Ebbie Date: 12 Oct 08 - 12:38 AM I've given up buying apples for the moment. We are paying $2.69 a pound for the cheapest of them. Pity, since there was a good harvest in the lower 48. |
