WEll, it's that time of year again!!!

The Aylesford Village Festival is running as a two day event this year on the 27th and 28th of June 2009 (the LAST weekend in June!).

Situated on the recreation ground, the evnt will be the usual mix of typical fete stuff / fun fair / dancing and music.

There will be 10 Morris Dancing sides there on the Saturday and three on the Sunday. The Morris Dancers will be dancing outside each of the four pubs in the vu illage. There will also be displays of Irish dancing a Belly Dancing.

There will be four groups peforming in in concert slots over the two days.

There will be five re-enactment groups giving demonstrations of Medieval, Saxon and Viking life on the Sunday.

There will be a twelve hour sing-a-round in the Cheqeurs pub. Several of the pubs will be holding beer festivals.

the official session is all day and all evening on the saturday. Unofficial one on Friday night. Unofficial on sunday during the day. We will have to make sure that we don't take over too much as the landlord does loads of lunches on a sunday! Still, we have his lovely patio if the weather is good!

Get a tray with handles and tring some rope through the handles so you can wear it round your neck at appropriate height for glass with straws. You should be able to get 6 or more glasses on the tray.

The malt is called "The Singleton" and it is from the Dufftown distillery, but there is only about a third of a bottle left apart from what remains in my flask.   

Kev has asked me to post revisions to singing arrangements. The Friday night will still be in the Chequers. Sunday will still be on the terrace of the Chequers so far as necessary to avoid spoiling the pub's profit from Sunday lunch - and the rest of Sunday in the Chequers. The landlord of the Chequers "forgot" that he had a 60-person party on the Saturday night for two people emigrating - with karaoke and a BBQ on the terrace. But he still has a cellarfull of real ale to dispose of...

Therefore Saturday night will sing from 8 pm onwards in the beer tent out the back of the village club - with Bombardier and London Pride at workingmen's club prices in the village club. Adjacent to the beer tent the scouts will be selling their legendary three-quarter-pounder burgers (oops, nearly typed "buggers, Lord Baden-Powell getting to me). THe nearest electric bands will ahve packed up by 1930.

Alas, we still may not build a big bonfire.

RESSIPY TIME:

Harissa 1 (makes about half a jamjarful)
3 to 4 tbsp dried chili flakes
A bulb of garlic
About 2 tbstp red paprika
2 tsp (NOT tbsp) caraway seed
2 tsp (NOT tbsp) coriander seed
1 or 2 tsp (NOT tbsp) cumin seed (technically you should dry roast this then grind it)
HALF tsp salt (or a good grind of nice salt – do not overdo it)
A good grind of black pepper
A handful of leaves of fresh mint (theoretically spearmint, but any other mint will do, I used lemon mint)

Soak the chilli flakes in boiling water. Drain AND KEEP the water (to use for thinning the paste if required)

Put the flakes and everything else in the blender and blend like the hammers of hell for several minutes, thinning as necessary with equal quantities of extra virgin (ie not from Knockholt) olive oil (or trendy modern seed oil of choice). Contemplate on the vicissitudes of life of the poor Moroccans who had to do that by hand.

Taste with great care. If much too fiery, try adding a little lemon or lime (supermarket juice like Jif will do but fresh and with the rind is nicer).

Put in jar in fridge. A thin layer of olive oil will help it keep.

Simples!


Harissa 2 (makes about two pound jamjarful)
9 oz of fresh chilis. I used about half a doz of the long ones for flavour, one Scotch bonnet 'cos it was all I had, and the rest frozen bird-eyes, so if you use 9 oz of fresh bonnets or 9 oz of fresh bird-eyes it will be hotter still.
2 tbsp honey, clear and runny if possible
A small grind of sea salt or more to taste
3 heaped tsp (not tbsp) carraway seeds (should be ground but if you blend hard enough who cares?)
3 heaped tsp (not tbsp) cumin seeds
Another tsp BLACK cumin seeds if you can get them
A bulb of garlic
4 oz of fresh piquillo peppers (whatever they are if you can get them) or bell peppers (preferably red, and you can roast and peel them if you like)
2 tsp tomato puree
2 tsp (NOT tbsp) red wine vinegar
4 tsp (NOT tbsp) extra virgin (ie not from Knockholt) olive oil (or trendy modern seed oil of choice)
About 2 tbstp red paprika
Half tbsp of the kernels from cardamom seeds. Shelling the cardomoms is boring.


Put everything in the blender and blend like the hammers of hell for several minutes. Thinning should not be needed. Contemplate on the vicissitudes of life of the poor Moroccans who had to do that by hand.

Lamb Tagine (you can scale down the dosage as necessary)
200g of dried apricots (fresh or tinned will do but then you don't need to soak them)
1 ½ to 2 kg of lamb. Most recipes say boned shoulder and that is what I used at Knockers, but I suspect that breast would be very good for the fat to absorb the spices – and cheaper too. You can use chicken or even vegetables in stead but then you will need another source of fats to absorb the spices. Diced turkey is cheap in supermarkets sometimes.
A big onion or two smaller. Red ones might be nice but I haven't tried them. Spanish are probably too mild.
A bulb of garlic (notice the cavalier attitude to garlic, here. Be careful if you are on the pull)
2 tsp (NOT tbsp) coriander seed OR 1 or 2 tbsp coriander leaves
1 or 2 tsp (NOT tbsp) cumin seed
1 tbsp ground cinnamon
400 g or more of tomatoes
4 tbsp extra virgin (ie not from Knockholt) olive oil (or trendy modern seed oil of choice)
500g or more of carrots (chunked)
500g or more courgettes (chunked)
3cm of root ginger
A lemon (or lime)
As much saffron as you can afford (Linda had a lump the size of a golfball that she got cheap in Morocco so we used all of that)
20 black olives (pitted, WITHOUT the brine they came in!)
Tbsp ground almonds if you fancy them: I don't
A large tablespoon of harissa or more to taste
Salt and pepper to taste
Flour to thicken


Fry the meat in the oil until sealed
Fry the onions in the oil until translucent (add more oil if you like)
Put in tagine. If you have not got a tagine a thick-bottomed cast iron pot or a Dutch oven or a casserole will do but you may need to be wary ofcooking on open fire!
Grate the ginger into the tagine.
Slice the lemon into circles, and segment – about 8 to a slice. They will make little sour bombs as you eat!
Fold the ginger and lemon into the contents of the tagine.
Add water so that it nearly covers.
Bring to boil and simmer GENTLY for an hour or more (on fire, in oven or in chimnea or on BBQ – but GENTLY. It doesn't matter if it goes off the boil so long as it does not cool below about 80 degrees centigrade.
Take off some liquid, make a flour paste, fry, adding a little liquid to make a roux, and return to the pot to thicken. Or just dump some flour in if you prefer, or you could add some cornflour to cool water and add so it thicken s of its own accord as it heats. If you want to be really ethnic you could use chickpeas – but BEWARE you don't want it so thick it sticks to the bottom of the pan.
Add everything else except for the courgettes and olives (well, you want the courgettes with some texture and the olives in one piece, don't you?)
Simmer gently for half to three quarters of an hour
Add the courgettes and olives.   Get going on your rice or cous-cous at this point too.
Simmer for about another 15 minutes, thickening and adding salt and pepper to taste


Serve over rice or cous-cous – or fancy bread if you prefer but I hate Morroccan and Eritrean breads.

Well we were due a heavy rain episode at 10.00am in Hastings which, according to the BBC, was due to move to Aylesford for around 4.00pm. We did not have the rain so hopefuly it has blown over!!

It 'chucked it down' here in Maidstone at about 04:30 hrs, but it's been dry since about 05:00hrs - here's hoping!!

I may well put up my small awning as it doesn't need to be 'nailed down'. We'll see.

I rather like the idea of being in the beer tent on Saturday night and club prices. Whoopee!!!

Just back. Well done Kev for all the organising. Obviously your word with the bloke whose mate lives upstairs worked, as we only got rained on once (but hell did it rain then).

Shame the landlord of the Chequesrs turned out to be such a plonker but I heard that the outside session at the Bush was excellent, and I certainly hugely enjoyed the evening sessions on the field in the Gong Scourers enclave.

I cannot imagine why but a huge amount of alcohol seemed to be drunk and there were some very poorly looking people some mornings.

Thoroughly enjoyed it Kevin - well done. The friday night was unexpected and a lot of fun - thanks to the Gong Scourers for their hospitality - the Pimms was fabulous. Well done to the'Bush' too for accomodating us at such short notice. I'm already looking for an invite for next year.

The Bush want us back next year, Friday evening Saturday, and Sunday.

It's a much nicer venue, and all of the bar staff spent what break time they had outside listening to us.

Highlights for me included some gritty and wonderful new material from Bob Kenward, a lot of inspired harmony, and a feeling of being welcome.

Book me in again for 2010 Kevin.

John Barden kindly gave me the dates for the rest of this years events at the Good Intent.
Now would it be possible Kev The Clogs to do the same with your events Re Otford Etc. Richard Re any Nags Head session that may happen later in the Summer/year.

This enables me to plot and plan and shift and change me leave at work so I can make these events and join in the fun.

Four hours driving got us back to Nottingham safe.. What a fabulous weekend after a one day visit last year, it was definitely worth the weekend camping. I have a couple of video's I may add on Utube. However they will have to wait until I return to london.

Had a fantastic weekend - thanks Kev for you organisation and thanks to Val and Lynn who provided both food and alcohol as well as a hospitable place to have our get togethers. Really liked The Bush as well - was pleasantly surprised that the locals at the pub - a lot of them younger people - really seemed to appreciate what we did and I also noticed a lot of people walking past the pub on their way to and from the fete smiling when they heard us. Also, the beer in the Bush was scrummy and cheaper than the Chequers!!! Can't wait until next year.

Next Don turned up there to run the Sat PM session and was told that the rugby was going on the telly and he could like it or lump it, so he wisely lumped it - at which point we decided we would not be back!

Hi ALL!!!

Left the field at around Seven last night!! Am home now and going to have an early night!!!

Thanks to all of you that attended the weekend - sounds like you enjoyed everything that we organised and equally, what we didn't!! Any suggestions for next year are always welcome.

Special thanks to The Bard, Don, Bob K and our own Hoff for keeping the singing and playing going throughout the weekend, both on the field and in the new home of folk at Aylesford - The Bush.

Thanks to all the Morris sides that attended. Great to see Skinner's Rats, Jez Gold and Norcsalordie over both days.

Thanks to the Val and Lynn and all who contributed to the fine selection of food over the two nights.

The Scouts and their legendary burgers were on top form as usual.

HUGE thanks to all who helped with stages, marquees, security fences etc etc - ESPECIALLY if you helped to take it all down on the Sunday night!!!!!

Finally - The Committee - Simon, Mark, Gareth, Neil and myself. It is a BLOODY big job getting Aylesford running each year - it is a pleasure to work with a team of dedicated and professional madmen during the year, and I look forward to doing it all again next year.

AS FAR AS I KNOW - it will be the last weekend in June as usual - BUT - I did pick up on a possible date change for 2010 which MIGHT - MIGHT see it a week later.

I will let you know AS SOON AS I KNOW!!!

Incidentally, Kev, I had a nice chat with the man on the PA rig on Saturday - a very reasonable fellow once it became clear I was a fellow anorak (I was fascinated that he was running C-Audio amps, not modern ones, although his Turbosound speakers were state of the art - we finished up agreeing that switch-mode power supplies can cause scratchiness) - and he was clear that he was promised a certain wherewithall to do his job properly and it did not arrive.

You can ONLY hear the PA rig properly, to get the sound right, from in front of it. So he wanted a little waterproof tent sufficiently back from (ie in front of) the stage and central between the speakers so that his expensive toys would be safe and dry there if it rained, while he tweaked the sound from there.

I'd have wanted the same.

Well done to all concerned. The hospitality at The Bush was ace, and it was nice to see the locals enjoying our session(s). It's very handy for the campsite/carpark. We found the alleyway leading straight to the field. I would counsel against moving the festival date though. At present it clashes only with Leigh Festival. Moving it to the following weekend would clash with Rainham Folk Day, and Danson Park Festival. We are going to both. Also, were thinking of camping next year.

I have heard nothing about the weekend OTHER THAN the weekend of the 26th will be the St Peter's School Fete and the Aylesford Festival will be the following week, start of July!!!!

Seems like it is a complete screwup and the locals know nothing about either!!!

Correct Tam, I washed my hands of the whole event.

However, Bishop Gundulf will be at the King George v in Brompton, near Chatham on the 26th which is Help for Heroes Day. All folkies are welcome to attend. Also, there is the Four Pub Beer Festival which NEEDS folkies and Morris Dancers.
