Subject: Lyr Req: Kugel songs, recipes, and information

I posted a song that mentions a kugel in another thread. This one is a potato kugel, but my idea of kugels in general is that they are not-very-glorified macaroni and cheese. I'm wondering if there are other songs about kugele, and if anyone has interesting recipes.

Here's the song:

    Subject: DTADD: Bulbes (Yiddish)
There's a well-known Yiddish song that follows the same pattern:

    BULBES (POTATOES)

    Zuntik - bulbes
    Montik - bulbes
    Dinstik un mitvokh - bulbes
    Donershtik un fraytik - bulbes
    Shabes in a novene - a bulbe-kugele
    Zuntik - vayter bulbes!

    Broyt mit bulbes
    Fleysh mit bulbes
    Varemes un vetshere - bulbes
    Ober un vider - bulbes
    Eyn mol in a novene - a bulbe-kugele
    Zuntik - vayter bulbes!

Sunday-potatoes, Monday-potatoes, Tuesday and Wednesday-potatoes, Thursday and Friday-potatoes. But on Saturday for a change-a potato pudding! Sunday-potatoes again.
Bread with potatoes, meat with potatoes, morning and evening-potatoes, over and again-potatoes. One time for something new, a potato pudding. Sunday-potatoes again.

Hmmm. In Milwaukee where I grew up, kugel was made from noodles, mild cheese or sour cream and a little sugar. You cooked the noodles, mixed in the diary products and sugar, and baked it.

(I confess I never cared for it.)

Sorry, I never heard any songs that mention it.

Kugel is 'ball' in German, and refers to balls of noodle dough encased around something or other.

This recipe sounds pretty good, I think I will try it.

Fruit noodle pareve

8 oz. (250g) wide egg noodles
3-4 eggs
1/2 cup sugar
1 teaspoon sugar
1 teaspoon cinnamon
1 1/2 cup Canned fruit pieces, well-drained.
1/2 cup margarine
1/2 cup brown sugar
1 cup or more cornflakes

Boil noodles al dente. Drain and rinse with cold water. Add beaten eggs, sugar, cinnamon, and fruit.
Place in mediun-sized casserole dish'
Crush cornflakes and sprinkle evenly over kugel
Bake, uncovered, for 1+ hours at 350 F.

I will use butter rather than margarine, and sprinkle with crushed shortbread (cornflakes-ugh!). We get a lot of fruit year-round now, so I will use it rather than the canned stuff.

This may make it non-kosher, but I am not Jewish.

All the kugele I've had were pretty bland. I was raised on Kraft macaroni and cheese, and Kraft tasted a whole lot better than the kugele I've had as an adult. But the Wikipedia Article makes it sound like kugele are absolutely delicious.
Hmmmm. I wonder how many packages of Kraft macaroni and cheese my parents used to feed a family with five kids. Maybe they served Kraft only on the nights they went out to eat.

If there's a song about kugel, it might be on Shelley Posen's CD, Manna:

MANNA
A tsimmes of Shelley originals, funny and sad, about Jewish food, family and festivals. You'll laugh, you'll cry, you'll run to the fridge.

Are kugel at all like varnitshkes? There's a trad Yiddish song about those.

Well, here are the lyrics to "Varnitschkes," posted at Zemerl. One Website gave "bowties" as a translation for Varnitschkes, but this video recording says they're like German Knödeln (dumplings).
There are two audio recordings here (click).

Oh, help, where can I get one?
Where can I get one?
Where can I get one?
A (wooden) noodle board to roll out the dumplings?
Without any hears, without any fat;
Without any pepper and without any salt.
Oh, a noodle board to roll out the dumplings!

  1. A (wooden) noodle board to roll out the dumplings?
  2. A knife to cut the dumplings?
  3. A pot to cook the dumplings?
  4. A young man to eat the dumplings?

And one more version, from hebrewsongs.com:

There's also a recording of Di Varnitshkes by the Australian band Klezmania on their album, Oystralia, but they don't have lyrics or recordings online.

There are three songs on the Posen CD that mention kugel. Es Gezunt! has a stanza that starts,

If Jews had been meant to be athletes and jocks
We'd have never been tempted by kugel

Sheyne Ponim begins,

Sheyne Ponim is mayn meydl
Makes my head spin like a dreydl
She's my kugl, I'm her kneydl
Such a sheyne ponim

So How Come You Don't Have Tongue? has a line,

You've got kneydelakh and kugel for the spendthrift and the frugal

I don't know about songs mentioning kugel. I grew up eating kugel, but it it not macaroni and cheese, my german (jewish) grandmother made it. It was a large round hard 'dumpling' that went in the soup and she sliced it up and everyone got a slice in the bowl of soup. By the was it was good! I wish I had the recipe!
