I've heard several renderings of the Malpas Wassail - always with immense harmonies - but is there an actual "tune" that I should know if I would like to "lead" this in a session?

There is a tune in the Revels songbook, where I think it is called "A Cornish Wassail".
It can also be found - of sorts, in Peter Kennedy's Book of English Folk Songs.
