Tom's threatening to make frog legs this weekend -- he just found a source.

I love squid every way I've ever had it -- last week at a local oriental buffet I had some squid in a very light batter with fried onions and nicely hot peppers. The barbecued squid was tasty as well, but a bit chewier. I make squid rings Greek style, dredged in seasoned flour and fried, served with a big green salad and a bottle of retsina. Several times (once at the Deerfield Fair and once in San Francisco) I had a lovely marinated squid salad and I've also enjoyed squid stewed in its own ink. One of my favorite snacks is tinned octopus bits.

All the news of the closing of the last sardine cannery in the country (in Maine) has made me hungry for some of the sardines in my pantry.

Idaho fresh-water squid marinated in its own ink, then breaded with panko crumbs and quickly sauteed with bacon and sea squirts. Freshly picked steamed fiddleheads in butter and lots of creamed new potatoes.

I envy you fresh caught rainbows -- a delectable delight! It's been a looooong time since I've had a fresh caught rainbow on my plate...about 40+ years, to be exact. Other trout, but not a rainbow.

That was one of the memorable meals of my life. Right up there with fresh-caught Canadian white fish that my mother stuffed and baked. Never had one from the fish market that came anywhere near close. And the delightful plate of smallish batter dipped frog legs I had in a little restaurant in north central Wisconsin (served with iceberg lettuce salad -- with three home made dressings; tiny new potatoes swimming in butter and parsley; and a wine list that consisted of a Taylor red and a Taylor white).

Best trout, best fish, I ever ate were sea trout from The Hamilton River in Labrador (renamed The Churchill River in the 60s... but if you call it that within earshot of a Labradorian, you will soon find out what they think of the new name).

I caught a number of four pounders in rapid succession when I figured out what they were "taking" on my first attempt. I used a Canadaian fifty dollar bill at the Coop grocery in Labrador City.

You know you folks are welcome to come fish with me any time. This summer we should all go to the Rockies, stay at my kids cabin and fish the high country ... the cut throat trout are incredible ... I love those fish ... my gosh they are something special. Not near as big as what I have here but more fun I think since they are really cagey critters and get spooked pretty easy, ya gotta sneak up on em and float your fly down the current.

The rainbows here are kinda dumb, you can catch one and the others come out to see what happened to their brother ... not so with cut throat or native brook, catch one, then you move on the others got the message ...same with the browns, very stubborn fish and very picky.

I love when the sun shines on them and they glow the colors of the rainbow. They are incredibly beautiful creatures. I was watching them yesterday when they were not interested in biting. They were interested in making baby rainbows. The big female was making a nest with her tail, the smaller males would swim over and she would chase them away ... the big old bruiser came over and she chased him away also ... this just continues over and over again until she lays the eggs.   

This hole I fish in is a tiny stream that runs into lake Erie. The water at some places is only inches deep but they make it up to the big hole. Now this big hole is probably only 20 yards wide and 15 yards long with a small waterfall. It is maybe 8 ft deep with a sandy bottom and crystal clear.   I have literally stood at the top of the waterfall (maybe 4 feet drop to the water) and had them jump the falls right at my feet ... absolutely wonderful ... normally I will crouch down and lay a streamer fly at the shallow end and work it right up to the falls.   sometimes like the other day they hit, sometimes like yesterday they just want to make babies ...

It is a wonderful thing to be there in any case. They are God's masterpiece.   Now the big brown trout will follow them, they come up to eat the eggs ... those critters are really wiley ... very hard to catch. I nail them in the lake standing on the break wall but in the creek, very hard to get them to bite anything..

My uncles used to fish rainbows while growing up in CO and later, as adults. They put back the little ones, but would have a cast iron skillet ready on a campfire for cooking up a few for supper. My dad would not eat fish, i don't know why, so he never took us fishing. It was okay with me...I hated all of the bones and, now, don't like killing them.:-) We do have BIG 'UNS here, though.:-)

I went brook trout fishing once in my life and it was such hard work I haven't been since,

Years ago I caught a trout that was so big it took 20 minutes for the hole to fill up that it left when I pulled it out.

I could see that it was a record size so I hauled it into town to get it weighed. The coal scale didn't go high enough so, I took a picture of it, and the negative weighed 14 pounds.

You abuse the trout's confidence. Really.

I learned to lay on a bank above a spot where you could see the trout (keeping your shadow out of the water and approaching stealthfully, of course). SLOOOOOOOOOOOOOOOWLY lower you hand and arm into the water behind the trout sloooooooooowly and carefully work your way up until your under the trout's belly -- which you sloooowly and carefully stoke front to back (like petting a cat). This relaxes the trout and puts it off guard, and then on one of the strokes you catch it and flip it up onto the bank. Wait a bit and do it again. Trout aren't very smart ("Gosh, where'd Doug go?" "Dunno, but his feeding spot is open and I got dibs!")

Terry... your story minds me of sommat... Dad was leading a cold weather survival course at Camp Aldershot, Nova Scotia in 1940 (he would take on recruits and run them through training there and then at Camp Aldershot, England and return on prisoner ships to start over) and live ammo was strictly forbidden.

First course he taught, he brought 3 live rounds and cracked a deer near the end of the course. Of course, he was found out and brought before the CO who would decide his fate and the obvious question was, "Why disobey a standing order?" Dad said that he felt it was only prudent to teach his men how to kill, gut, skin, and butcher an animal properly on a survival course.

His next course was arranged hastily... to teach other instructors these survival skills for inclusion in further courses. That was one of the reasons he made Lewey in about 8 months after signing up.

Now, I could tell you a story about Dad teaching me how to catch trout on a brook with a properly cut branch and birch bark, but I just gotta here how ya "tickle trout." I'd be much obliged, kind sir.

When I was doing my training bit in the RAF we had a Summer Camp in Wales . One of our lads was a Country guy who showed us how to tickle trout in the stream by the main camp Site ! Nothing of any real size , but for a City Boy even a Six Inch trout caught by hand was FUN ! And ALL thrown back in straight away - I dobt think the Mess Sergeant would have countenanced the idea of frying them up for us !

Many people here eat them, I actually don't like them out of Lake Erie. The big guys are just so oily ... once in a while I will keep a few of the stocked fish that the DEC puts in at the creeks that are away from Lake Erie. But the big Steelhead and Brown trout just have such a strong taste. I am not much of a fish eater to start with but I don't care for those at all. Normally I just look at them, talk to them and put them back in. I even crimp the barbs off my flies so I don't hurt em. Now back home in PA we would get the small native brook trout. Those are excellent in a pan ...

Those buggers here Gary are huge. growing up in central Pennsylvania I was use to catching 12 - 14 inches, after I moved here in 1979,   a 20 inch rainbow is small, they all run in the mid twenties here ...

Dan... I fished speckles in Labrador (and others). Once, I knocked a six or so pounder between two lakes on a dry fly with an eight foot rod. Man, what a scrap in shallow rapids.

Unfortunately, me being poor Irish stock from the backwoods of New Brunswick, it was the best trout I ever ate. Fried in an iron pan on the side of the stream roight quick.
