Does anyone know of the origins of this song? Fill in the blanks? Alternate versions? It's been handed down through the family but I can't find my recording.

A comical story I'll surely unfold.
I went to Missouri when I was twenty years old,

I stopped at a place to stay all night;
My breakfast and supper, I thought it all right.
The table was set and the knickknacks spread;
It was hoecake and hominy and a possum's head.

When supper was over and all had fed
On hoecake and hominy and a possum's head,
The straw was stirred and the sheepskin spread.
"And now," says the old man, "We'll all go to bed."

I went to bed expecting some ease;
I scarce could sleep for the lice and the fleas.
The lice, they did bite and the fleas, they did crawl;
It was enough to aggravate any human at all.

I didn't find much on this song - nothing in the Traditional Ballad Index, and only one entry in the Roud Folk Song Index.
I did find another version at UCLA:

Thank you all so much! Grandpa sang it as "came here to Arkansas" & Dad as "to Texas" so I was a little lost.

Jenna Snell, I see there are verses in common with Nottamun Town in your family version; in particular:

From your version-
