Raw first, then steamed followed by clam chowder and last fried. Be it deep fried or thrown in an omelet.

But have you ever heard of a "Gooey Duck?"
I just got off Skype with my brother in law in B.C. and was teasing him because I was eating a bowl of clam chowder(he just recently located there from Nova Scotia. He informed me that there is a specie of clam located there by the name of Gooey Duck. Some of you may have heard or even tasted these. Have a look at this video. I had never heard of them.

I dunno... be pretty hard to beat a chowder made with Quauhogs (local spelling; var. Cohog, from the uneducated Irish dic.) from Shediac Bay. The taste is in the parasite. Posted about it in previous threads. Tastiest clam I ever ate was from Fredericton, NB, locally known as a land clam, more commonly known as a bearded clam.

No, don't chastise me... it's a waste of your time. I really don't care.

If ya wanna do the clam's mating call, make fists and place them over and under your elbows in front of your face. Separate your arms vertically to reveal your face and say, "Wanna fuck?"

Yes, that is a childish joke. I thought I told you... don't chastise me... it's a waste of your time. I really don't care.

Somewhat related Bobert story to follow:

Back when I was 17 and 18 I spent my summers on Long Beach Island, NJ, which Hurricane Sandy recently decimated... Anyway, the way that all of us kids made money was clamming, Every day 4 of us would get into Bobby Gray's 16 foot boat and head out into Barneget Bay where we would spend 2 to 3 hours (low tide) digging and "jumping" the clams up our legs, into our right hand and into a bushel basket sitting in the middle of an inner tube... In a good hour you could collect 500-600 clams... Every evening Mr. Cotrell's refrigeration truck would pull up to the beach house and collect the day's harvest of clams and pay us for the previous day's haul... They paid 1.6 cents per clam which was really good money for the 60's if you had a really good day of 1700-1800 clams...

BTW, every kid who has ever clammed knows all about "clamming boots" which were made of old inner tube and sewn up to go over your feet to protect them from being cut...

BTW, Part B... Ya' had to have a license to clam and on occasion the bay-cops would check you out and make sure you weren't taking any clams that were too small... Ya' see, the cherry-stones, which are smaller than a 50 cent piece, were illegal to harvest... But the weeklies (folks who just came to the beach for a week which was just about everyone except a few of us) would pay good money for cherry stones so all the sneaker clammers had a little onion sack tied under their baskets that couldn't be seen by the bay-cops... Of course,k I never did that (wink, wink)...

There ya'll have it... Another Bobert story comes to a close...

B

EVERYONE knew what both of you meant. Even me and beer and watching football at the same time are involved. No need to apologize or correct or point... shit happens not only with beer but with every day that passes... get used to it.

JtS... fried mussels! Better than fried clams but dangerous as hell. Oh, the chances of typos are low but one bad mussel can make you "typo" so bad you can't remember ten seconds ago. I stopped eating them after I read too many stories about problems with them... maybe it was a mollusk war but I just don't care to take the chance. The ale does enough damage.

CREAM? Huh? I use water in my chowder and enough skim milk to make it look like chowder. After that, I let the seafood and onions bring out the flavour. Now, I have a secret about my recipe... I tell everyone I use margerine... hahahahahaa!

Scallops... I get Bay of Fundy Scallop "pieces" for $6.99/#. Buddy! What a treat! I fry em in marg with a touch of canola oil to raise the pan heat. That's it... nothing else. Just tender and THEN they either go into a chowder or whatever or I eat them as finger food... on a cracker or on my tongue.

HARRY HERMAN
by John Bailey (maybe Sam Hinton, who recorded it)

Harry Herman he was short and fat
But the best clam digger out of Poppum Flat.
And he always said with a touch of pride
He could dig six barrels on a ten foot tide.

Mary Muggins she was tall and thin
And she promised ol' Harry she would marry him,
But she kept delayin' when she'd be his bride
'Cuz they looked so simple settin' side by side.

Harry Herman says "No I won't wait,
Quit your foolin' and set the date,
If we keep delayin' we could both be dead,
And I know another woman up in Parker Head."

Mary Muggins got into a stew
She really didn't know just what to do
But at last she said "I'll be your bride
When you've dug six barrels on a ten foot tide."

Harry Herman, when the moon was full
Give his hoe a polish and his boots a pull,
He took his skiff and was waintin' around
Right on the spot when the tide went down.

Harry Herman he begin to dig
When the holes was thickest and the clams was big
And when the tide had reached its low,
He'd filled three barrels and had three to go.

Harry Herman, when the tide was slack
Had two sore arms and an achin' back
He kept on diggin' away like sin
Because he had to get the clams before the tide come in.

Harry Herman when the tide returned
He was seein' visions and his windpipe burned
When the tide got up to where he stood
He'd filled five barrels and filled them good.

Mary Muggins she began to shout
"You can't dig clams and the tide ain't out!"
"Quit your chowderin' and I ain't through yet
I've dug them dry and I can dig them wet!"

Mary Muggings said, "Come in please,
The tide is risin' up around your knees!"
"Well let'er rise around my neck
I want them clams and I'm short one peck!"

Mary Muggins she screamed, "Come in
The tide is risin' up around your chin!"
"You may not see me again alive
But I'll get them clams if I have to die!"

Mary Muggins was about to pop
Says, "I'll marry you now if you'll only stop!"
But the only answer from down below
Was a little stream of bubbles that told her no.

Poor Harry at the next low tide was found
Still standin' in the spot right where he drowned
His hoe was tight in both of his hands
And the pockets of his overalls was full of clams.

Now when the moon is full and the tide is low
You can still see Harry and his ghostly hoev He never will stop even though he died,
"Til he's dug six barrels on a ten foot tide.

My favourite typo
In case of an emergency, remain clam.

Like gnu says, mussels tend to accumulate fecal coliform (aka the bad microbes in sewage) and bad toxins (PSP, aka red tide, is one of them - and is at higher levels in the warmer summer months) faster than most clams. Fortunately most mussels you buy in the store are cultured (aquacultured) and tested. Some of the local clams you buy (as they are all mostly dug from the wild) are likely not tested for toxins or fecals, and could be from a questionable source. Some higher scale clam merchants depurate the wild clams before marketing, making them safe (placing them in tanks of high quality water for at least 36 hours to purge contaminants from them).

Ed... them people what got messed up ate the cultured mussels which have a MUCH higher incidence or Red Tide (unless ya don't know squat about pickin mussels) because the farming technique stems the required flushing in slow moving waters. The mussels I eat are the mussels I harvest... NONE cultured, never again. Tested? Well, people die from "tested" foods every day so, no thanks.

JtS... just make a chowder with water and use skim milk to turn it white (or to taste... ie, mess with it). I fry my scallops and add the scallops and lobster AFTER the chowder has cooled and is about to go in the fridge. If ya don't, they lose their flavour. The only "recipe" thing is... onions... yellow onions... they MAKE a chowder. No onions BREAKS a chowder... fer me.

""Well, people die from "tested" foods every day so, no thanks"".

I don't recall any recent deaths or illness from local cultured mussels, as good testing techniques were initiated quite some time ago. Earlier illness, way back, was from an invasive microbe they did not know lived in the area. The testing is very good, as some marine toxins kill you fast or damage you badly.

PSP illness is normally from wild harvested marine molluscs, and can clearly and rapidly kill you. You may think your local area is safe, but the psp range is expanding each year, and there is no possible way you to know unless the waters are tested in a lab. Those are the facts, choose to heed them or not.

As for fecal coliform, if you are away from houses and cottages, and farm run off, the molluscs are likely safe. But, contaminated ones normaly only give you a pain in the gut and the shits.

Yes, gnu, that is the microtoxin that I indicated earlier, and it was quite a few years ago, and not PSP and involved oysters. Sales of all marine mulluscs was halted (it was Christmas time) until they found the cause.

It involved a previously unknown microtoxin, that was never before found in Atlantic Canadian waters - no one knew it was present before thisn time. It could just as easily have been in the wild mussels, or clams anyone ate.

Since that time, the testing program for cultured mussels and oysters includes testing for many micro toxins (not just PSP) and has been much improved. I have much more confidence in those tests, that are not as rigid on local wild marine molluscs -some areas have no or few tests.

I have much more confidence in testing on cultured mussels and oysters than I have for commercial beef or chicken testing.

Here is a tip with wild clams.

If the wild clams cross a provincial boundary, they must be inspected by a federal agency/lab. If they are sold inside a province, they are only required to meet provincial inspection standards. The feds are (or have been) much better equipped to inspect these critters. So, I would prefer to roll the dice with those that may have been "federally inspected. If Canadian products go into the USA, they must be federally inspected to a standard acdepted by the USA (which, in the past, was lower than Canadian federal inspection standards- I am not sure if that has recently changed).

I believe the tomato based variety of clam chowder is commonly called "Manhattan Style" clam chowder, at least in the USA. The broth strikes me as very similar to the broths used in Mediterranean fish stews and soups - perhaps not quite as highly seasoned.

Howard Johnson's uses Gooey-duck? I didn't know that Dick. I have heard that Howard Johnson's makes a good chowder but have never had the opportunity to taste it.
You could be right about 10 Penny Ed. No great loss. Never cared for beer greater that 5% alcohol. Ten penny was around 8% I think.

Yes Beer, 10 Penny had high alcohol-somehow it won a lot of awards in Europe - but I never liked it. I once knew a cheap fella who used to take 6 of them to parties. He would drink other folks beer all night and take his 6 home, confident that no one would take one from the fridge.

Ho Gooey-duck clam stew - I like the sound of it.

In all things, ALWAYS GO TO MUDCAT FIRST!!! Nobody believes this but I keep trying to tell you, THERE IS NEVER ANYTHING NEW ON MUDCAT!!!

Geoducks are no different. Mentioned many times here, but probably first in this thread titled "Acres of Clams"......from 13 YEARS AGO!!! It starts with a different discussion but gets into the Geoducks with this post from the wonderful and sadly missed, Sandy Paton..

And for the record, I love shellfish.....any shellfish but scallops are at the top of my list. But I love clams in almost any configuration from steamed to soup to fried. Love mussells especially when cooked with recipe including garlic, shallots, tarragon, and a good white wine. Manhattan style clam chowder is a shameful waste of good clams. If I want a tomato based fish soup I make Cioppino.

Just in case you never heard Arlo tell the tale and then sing the Chantey, what follows is the tale of Reuben Clamso.............

Wanna hear something? You know that Indians never ate
clams. They didn't have linguini! And so what happened
was that clams was allowed to grow unmolested in the
coastal waters of America for millions of years. And
they got big, and I ain't talking about clams in
general, I'm talking about each clam! I mean each one
was a couple of million years old or older. So imagine
they could have got bigger than this whole room. And
when they get that big, God gives them little feet so
that they could walk around easier. And when they get
feet, they get dangerous. I'm talking about real
dangerous. I ain't talking about sitting under the
water waiting for you. I'm talking about coming after
you.

Imagine being on one of them boats coming over to
discover America, like Columbus or something, standing
there at night on watch, everyone else is either drunk
or asleep. And you're watching for America and the
boat's going up and down. And you don't like it anyhow.
But you gotta stand there and watch, for what. Only he
knows, and he ain't watching. You hear the waves
lapping against the side of the ship. The moon is
going behind the clouds. You hear the pitter patter of
little footprints on deck. IS THAT YOU KIDS? IT AIN'T.
MY GOD. IT'S THIS HUMUNGUS GIANT CLAM!

Imagine those little feet coming on deck. A clam twice
the size of the ship. Feet first. You're standing
there shivering with fear, you grab one of these. This
is a belaying pin. They used to have these stuck in
the holes all around the ship ..you probably didn't
know what this is for; you probably had an idea, but
you were wrong. They used to have these stuck in the
holes all along the sides of the ship. Everywhere.
You wouldn't know what this is for unless you was that
guy that night.

I mean, you'd grab this out of the hole, run on over
there, BAM BAM on them little feet! back into the
ocean would go a hurt, but not defeated, humungus
giant clam. Ready to strike again when opportunity
was better.

You know not even the coastal villages was safe from
them big clams. You know them big clams had an inland
range of about 15 miles. Think of that. I mean our
early pioneers and the settlers built little houses
all up and down the coast you know. A little inland
and stuff like that And they didn't have houses like
we got now, with bathrooms and stuff. They built little
privies out back. And late at night, maybe a kid would
have to go, and he'd go stomping out there in the
moonlight. And all they'd hear for miles around...
(loud clap/belch)....one less kid for America. One more
smiling, smurking, humungus giant clam.

So Americans built forts. Them forts. You know them
pictures of them forts with the wooden points all
around. You probably thought them points was for Indians.
But that's stupid! 'Cause Indians know about doors. But
clams didn't. Even if a clam knew about a door, so what?
A clam couldn't fit in a door. I mean, he'd come stomping
up to a fort at night, put them feet on them points, jump
back crying, tears coming out of them everywhere. But
Americans couldn't live in forts forever. You couldn't
just build one big fort around America. How would you go
to the beach?

So what they did was they formed groups of people. I mean
they had groups of people all up and down the coast form
these little alliances. Like up North it was call the
Clamshell Alliance. And farther down South is was called
the Catfish Alliance. They had these Alliances all up and
down the coast defending themselves against these
threatening monsters. These humungus giant clams. And
they'd go out there, if there was maybe fifteen of them,
they'd be singing songs in fifteen part harmony. And when
one part disappeared, that's how they knew where the clam
would be.

Which is why Americans only sing in four part harmony to
this very day. That proved to be too dangerous. See, what
they did was they'd be singing these songs called Clam
Chanties, and they'd have these big spears called clampoons.
And they'd be walking up and down the beach and the method
they eventually devised where they'd have this guy, the
most strongest heavy duty true blue American, courageous
type dude they could find and they'd have him out there
walking up and down the beach by himself with other chicken
dudes hiding behind the sand dunes somewhere.

He'd be singing the verses. They'd be singing the chorus.
And clams would hear 'em. And clams hate music. So clams
would come out of the water and they'd come after this one
guy. And all you'd see pretty soon was flying all over,
the sand flying UPANDOWNTHEBEACHMANMANCLAMCLAMMANMANCLAM
MANCLAMCLAMMANUPANDDOWNTHEBEACHGOINGTHISWAYANDTHATWAYUP
THEHILLSINTHEWATEROUTOFTHEWATERBEHINDTHETREESEVERYWHERE
Find more similar lyrics on http://mp3lyrics.com/pGAFINALLYTHEMANWOULD jump over a big sand dune, roll over
the side, the clam would come over the dune, fall in the
hole and fourteen guys would come out there and stab the
shit out of him with their clampoons.

That's the way it was. That was one way to deal with them.
The other way was to weld two clams together. l don't
believe it. I'm losing it. Hey. What can you do. Another
night shot to hell.

Hey, this was serious back then. This was very serious.
I mean these songs now are just piddley folk songs. But
back then these songs were controversial. These was
radical, almost revolutionary songs. Because times was
different and clams was a threat to America. That's right.
So we want to sing this song tonight about the one last...
You see what they did was there was one man, he was one
of these men, his name will always be remembered, his
name was Reuben Clamzo, and he was one of the last great
clam men there ever was. He stuck the last clam stab,
the last clampoon into the last clam that was ever seen
on this continent.

Knowing he would be out of work in an hour. He did it
anyway so that you and me could go to the beach in
relative safety. That's right. Made America safe for the
likes of you and me. And so we sing this song in his
memory. He went into whaling like most of them guys did.
And he got out of that when he died. You know, clams was
much more dangerous than whales. Clams can run in the
water, on the water or on the ground, and they are so big
sometimes that they can jump and they can spread their
kinda shells and kinda almost fly like one of them flying
squirrels.

You could be standing there thinking that your perfectly
safe and all of a sudden WHOP....That's ' true...And so
this is the song of this guy by the name of Reuben Clamzo,
and the song takes place right after he stabbed this clam
and the clam was, going through this kinda death dance
over on the side somewhere. The song starts there and he
goes into whaling and takes you through the I next...

I sing the part of the guy on the beach by himself. I go
like this: "Poor old Reuben Clamzo"
and you go "Clamzo Boys,
Clamzo". That's the part of the fourteen chicken dudes over
on the other side. That's what they used to sing. They'd be
calling these clams out of the water. Like taunting them,
making fun of them. Clams would get real mad and come out.

Here we go. I want you to sing it in case you ever have an
occasion to join such an Alliance. You know some of these
Alliances are still around. Still defending America against
things like them clams. If you ever wants to join one, now
you have some historic background. So you know where these
guys are coming from. It's not just some 60's movement or
something, these things go back a long time.

Notice the distinction you're going to have to make now
between the first and easy "Clamzo Boys Clamzo" and the
more complicated "Clamzo Me Boys Clamzo". Stay serious.
Folk songs are serious. That's what Pete Seeger told me.
"Arlo I only want to tell you one thing...folk songs are
serious". I said "right". Let's do it in C for Clam...
Iet's do it in B...for boy that's a big clam... Iet' s do
it in G for Gee, I hope that big clam don't see me. Let's
do it in F...for he sees me. Let's do it back in A...for A
clam is coming. Better get this song done quick. The Story
of Reuben Clamzo and His Strange Daughter in the Key of A.

1. Oh poor old Reuben Clamzo
(I) Clamzo boys Clamzo
Oh poor old Reuben Clamzo
(II) Clamzo me boys Clamzo

2. Oh, Reuben was no sailor
(Clamzo boys Clamzo) (Refrain I)
So they shipped him on a whaler
(Clamzo me boys Clamzo) (Refrain II)

3. Because he was no beauty (Ref. I)
He would not do his duty (Ref. II)

4. Because he was so dirty (Ref. I)
We gave him five and thirty (Ref. II)

5. Oh Reuben Clamzo's daughter (Ref. I)
She begged her dad for mercy (Ref. II)

6 She brang him wine and water (Ref. I)
And a bit more than she oughta (Ref. II)

7 Well he got his seaman's papers (Ref. I)
He's a terror to the whalers (Ref. II)

8.And he sails where 'er the whalefish blow (Ref I)
As the hardest bastard on the go (Ref. II)

9 Oh poor old Reuben Clamzo (Ref. I)
Oh poor old Reuben Clamzo (Ref. II)

Hmmmm Ed T.

Perhaps you can look at it in terms of its relative penis-ness. It looks more lake a penis than any other mollusc I can think of. More so than a snail or a squid or a scallop. The geoduck looks more phallic than any "phallic symbol" I can think of as well such as the Eiffel Tower, or the Washington Monument, or Some guitars..

So if your question is "Does my penis look exactly like that?" The answer would be "No."

But if your question is "Does that look more like my penis than most other things?" Then I would say a resounding "Yes!!"

Believe it or not, I didn't, there is a video on YouTube! I saw Arlo do it probably in '79 or maybe '78 when he was touring the small venues seating less than 75 or so. The joint I was in probably held less than 40. I saw him do it once on some PBS thing around that time too. It cracked me up but I never knew all the words til the 'Net.

BTW, if you read down a post or two on the video, you'll read about a possible reason for the song. Also, as I'm sure yo're aware it's based on Reuben Ramso. Anyway..............Hhhhhheeeerrrrreeee's ARLO!!!!

gnu, A bit of info from a topic yesterday.

I did a bit of research on the net, and the Domoic Acid incident, where people were sick and there were at least one death (possibly in Quebec) was from commercially grown mussels from eastern PEI. It was 1987 and there have been no cases since, as testing has been put in place (they did not know the stuff existed locally before this occured).

So, you were correct, and my recollection was wrong (it was not oysters). However, they did put a quarintine on all shellfish -not just marine filter-feeders(commercial and wild, including clams and oysters) for some time after, while they figured it out.

However, the concern for mussels-first has little to do with the flushing associated with commercial mussels. It is because mussels (wild or farmed) filter these toxins present faster into their bodies than the other filter feeders. They are used as "first indicators" BTW, scallops are filter feeders, but the toxins do not accumulate in the muscle (the hinge-meat, which is eaten with scallops) just the organs, which we eat with most other filter feeders.

Check it out below:

PSP and Domoic Acid

I believe ozone is used to treat some marine molluscs, for light fecal coloform contamination - but, I do not believe it is effective for marine biotoxins.
