Hard sauce; it's all to do with alcohol.

In North America, the term hard liquor is often used to distinguish distilled alcoholic drinks from non-distilled ones, whereas the term spirits is used in the UK.

So brandy butter is known as hard sauce in North America. Rum butter is an alternative, certainly in England.

And apple juice is often called cider in North America, where fermented apple juice is called hard cider. In the UK, cider refers to fermented apple juice, called cidre in France. While sweet apple juice comes from dessert apples, traditional cider is made from bittersharp and bittersweet cider apples.

Soft drinks are the alternative to hard drinks. 'The term soft drink was originated to distinguish the flavoured drinks from hard liquor, or distilled spirits. Soft drinks were recommended as a substitute in the effort to change the hard-drinking habits of early Americans.' Britannica

I was going to add 'And what the hell is "hard sauce"' but following a search in the database I find that it is what I know as 'brandy butter', or butter icing with a bit of rum, brandy and/or cream added. Why it is described as 'hard' I have no idea.

What's all this animosity toward fruitcake that's developed over the past few decades!??

I grew up with all kinds of goodies and munchables associated with Christmas, one of which was fruitcake. We kids loved it and scarfed it down with great glee. Yet, within recent years, fruitcake has come to be the butt of all kinds of rude humor and general slanders. I don't get it!

Tell you what:   If you wind up with a fruitcake you don't want, PM me. I'll gladly take it off your hands.

I use my electric skillet to steam puddings. It's one of the few things I use it for, but it's really easy to check the water level and so on. I use one of those vegetable steamer things that open up like a flower for steaming in a pot and folds up for storage, to hold the pudding out of the water. Here's my family recipe for plum pudding:

1/2 cup sugar 1/2 cup flour 2 teaspoons baking powder, or a pinch more
1 1/2 cups suet, coarsely chopped (this helps to find and remove the connecting membranes)
1 1/2 cups TOTAL of raisins, nuts and what-you-will
1 small shake salt   Enough water to hold together.

Tie loosely in cheesecloth or white muslin. Steam slowly at a low temperature on a trivet until it is bready, darkened, and the fruit sticks out.

SAUCE: The pudding drippings, flour-and-water, butter, and sugar. This will be a bit thin, but tasty.

My mother served this every Thanksgiving, and my paternal grandmother always asked for the recipe. My mother never gave it, because her mother-in-law would probably have turned green at the thought of eating suet. I don't know about this, my grandmother knew that lard made the best pie crusts, but there you have it.


And now for another pudding recipe, from A Vermont Cookbook, by Vermont Cooks, first edition, 1946

Steamed Thrift Pudding

2 cups bread crumbs   1 cup molasses   1 cup hot water   1 cup flour
1 cup raisins   1 whole egg   
1 teaspoon each baking soda, cloves, and cinnamon   
1 Tablespoon shortening

Sift soda and spices with flour. Pour molasses and hot water over crumbs and let stand until cool. Add other ingredients and stir well. Put into a greased tubed pan or pound tin cans (I use a loaf pan) and steam three hours. Serve with any hot sauce (sic)(you know we're not talking habaneros here, so stop giggling), or a hard sauce.

This tastes like a dark, rich gingerbread, and can be sliced and eaten cold, as well as warm with sauce.

i used to make "boston brown bread" which was steamed in cans in the pressure cooker...It had chopped figs in it..and sour milk and molasses

it works best with cans that do no have ridges in them...smooth cans are easier to get the finished bread out of...

'We singers make bold' appears in The Joy of Christmas, Worrall Male Voice Choir, and the note says simply: 'Closely associated with the Mount family. Different versions widespread throughout the country.'
It is also on the Leader recording A People's Carol, which has a cover photo of the Mount family carol party. The specific note here says:
'This carol is found in other parts of the country and is quite distinct from the 'figgy pudding' or the 'pocketful of money' versions. It has always been a great favourite locally for it occurs in many of the older manuscript books and is frequently mentioned in the newspaper accounts.'
There is also mention of 'the elaborate five volumes that had once belonged to the Mount family of Worrall'.
I also remember English Tapestry singing it, albeit briefly.

According to the OED, figgy pudding does not contain figs. "Figgy pudding" is a dialect name for Christmas pudding, in a dialect in which "fig" meant raisin. Likewise, "plum pudding" is another dialect name for Christmas pudding, in a dialect in which "plum" meant raisin; and (of course) Christmas pudding does not contain plums either.

I was going to try to make Christmas pudding this year, and researched the matter, with the above results, as well as the fact that I would need to get hold of suet somewhere (nontrivial in the US), as well as invest in the equipment for large-scale steaming. So I gave up; it's fruitcake again this Christmas. At least I can make my own hard sauce.

I had plum duff made right once, (someone followed a recipe from a 19th-century whaling journal but with FRESH ingredients and no boll weevils) it was fantastic. If figgy pudding comes out anything like it, it'll be loverly.

You can steam it in a steamer (a perforated top section which sits on a saucepan, and has a lid), or any saucepan, with a trivet to hold it off the bottom, and the water coming halfway up the basin, or in a slow cooker.

In recent years I acquired my (American - New York state) grandmother's recipe for figgy pudding. It's much plainer than the one listed above, and non-alcoholic. (It would be easy to re-incorporate the alcohol into the recipe. I suspect it was deleted in the 20th century.) The final product is just very rich on its own, crumbly, and crunchy from the fig seeds. I like it with a lemon sauce, but there are other recommendations (see below).

Figgy Pudding Cream together: 1/2 c. butter, 1 c. sugar. Blend in 2 eggs. Separately, combine 1 c. flour, 1 tsp baking soda, 1 tsp cinnamon, then mix in 2 c. dry breadcrumbs, 1 c. chopped figs. Alternate mixing into the butter mixture 1) the dry ingredients, and 1 c. buttermilk.

Fill greased mold(s) 2/3 full, cover and seal (I used foil and string -- the handle point's a good one that I didn't have!). Steam for 4 hours. (That's over, not in boiling water.) Release steam a few minutes before unmolding. Serve warm with lemon sauce, custard sauce, ice cream, or whipped cream.

For a late 20th/early 21st century variation, you can cook it in the microwave: covered with plastic wrap, pierced, and cook for 8 minutes at medium high (1000 watt oven) worked for half the recipe. It comes out pale, instead of dark, but pretty comparable in consistency.

CHRISTMAS FRUITCAKE RECIPE --------------------------- You'll need the following: 1 C water 1 tsp. baking soda 1 C sugar 1 C brown sugar 4 large eggs lemon juice 2 C dried fruit nuts 1 tsp. salt 1 FULL bottle of your favorite whiskey > > Sample the whiskey to check for quality.
About 1/2cup of whiskey would be a good sample
Take a large bowl.
Check the whiskey again to be sure that it is of the highest quality.
Repeat.
Turn on the electric mixer.
Beat 1 C of butter in a large fluffy bowl.
Add 1 tsp. sugar and beat again. Make sure the whiskey is still okay, by having another drink
Cry another tup. Turn off the mixer.
Break two legs and add to the bowl and chuck in the cup of dried fruit.
Mix on the turner. If the fried druit gets stuck in the beaterers,pry it loose with a drewscriver.
Have another sup of whiskey to check for tonsisticity.
Next, sift 2 cups of salt. Or something. Who cares.
Check the whiskey again.
Now sift the lemon juice and strain your nuts.
Add one table. Spoon. Of sugar or something.
Whatever you can find.
Grease the oven. Turn the cake tin to 350 degrees.
Don't forget to beat off the turner.
Throw the bowl out the window.
Check the whiskey again.
Go to bed. Who the heck likes fruitcake anyway??!!

Recipe for "A Smoking Bishop"
Taken from "Drinking With Dickens", published in the US by New Amersterdam Books, NY

'Port was the base for a number of drinks: "we will discuss your affairs this very afternoon, over a Christmas bowl of smoking bishop." Bishop seems to have been a very popular drink, and no wonder. I discovered it many years ago and it quickly became a traditional winter party drink. Not only is its taste exquisite, but equally its medicinal qualities are great. You can feel it doing good. Temperatures go up, from the top of the head (bald heads turn red) right down to the toes.'

A Smoking Bishop

Ingredients For an American version
5 sweet oranges
1 old fashioned grapefruit
1/4 lb sugar or to taste
2 bottles cheap strong red wine
1 bottle ruby port
cloves

How It's Done

Bake the oranges and grapefruit in the oven until they are pale brown and then put them into a warmed earthenware bowl with five cloves pricked into each. Add the sugar and pour in the wine - not the port. Cover and leave in a warm place for about a day. Squeeze the oranges and grapefruit into the wine and pour it through a sieve. Add the port and heat, but do not boil. Serve in warmed goblets and drink hot.

steaming and baking will give very different results, even when the mix is the same. I have a recipe that calls for either, which I usually steam. baked it once because my steamer was in use...was okay - but just not the same.

I made figgy pudding for Christmas about ten years ago, following a recipe in Verity Isitt's "Take a Buttock of Beefe" (not a book I would recommend, as she purports to offer original 17th century recipes paired with their modern equivalents but is ridiculously loose in her idea of an equivalent). It didn't include breadcrumbs in the mix, but it was covered with a simple pastry crust. It was pretty dreadful... LTS is quite right about the "sharpness" of it. Of course, I'm not a very good cook, and I may have gone a bit heavy on the brandy. Come to think of it, I may have decided it would be a good way to use up some grappa I'd been given.... Normally I don't give a fi.....about pudding,but what a great recipe this is.Not only do you get to bake a cake, you also get down with some DIY and a basin.Not to mention social history etc.

To add to Liz's comprehensive notes . . surely the fact that Figgy Pudding is a steamed pudding while fruitcake is baked is also significant . . (well, it seems to make a difference in our kitchen . .)

Fruit cake uses different fruits; raisins, sultanas and cherries, and is a harder texture and drier. Figgy pudding is more moist and has a sharper taste, due to the apples and brandy. It's also about 500yrs older, which is why it stipulates whole meal (brown) flour and breadcrumbs. Only the very rich got to eat white flour, the lower orders got the nice brown flour, the lowest got the bits with all the husks, grit and stuff in, which is why they knackered their teeth early in life. There, where else could you get cookery and social history in one posting?

I don't know about the wm, rabitrunning,.... I just copied it off of one of the many recipe websites I found. Maybe it is a typo? Someone more enlightened may enlighten us.

Figgy Pudding
225g dried figs
50g candied peel,chopped
125ml brandy
1 small cooking apple
1 medium ccoking apple
50g fresh wm.breadcrumbs
50g wm.flour
1 tsp cinnamon
1/4 nutmeg, grated
grated rind and juice of 1 lemon
2 eggs , beaten
butter for greasing a 11/2 pint-850ml pudding basin

Chop the figs and place them in a bowl with the peel, pour the brandy over the fruit and leave to soak over night peel and grate the apple, also grate the carrot , mix both with the soaked figs , mix the breadcrumbs and flour in a mixing bowl , add the cinnamon, nutmeg and lemon rind. add the fig mix , lemon juice eggs and mix well . put the mix into the pudding basin and cover with grease proof paper and foil, tie a cotton string around the basin and make a handle for easy lifting. steam for 3 hours

I don't "know", but I always assumed it was a plum pudding/fruitcake thingie with figs in it........like fig bars.........

My voice teacher asked me this question today and I had to admitt I've sung it for years and have no idea what figgy pudding is! Best we could come up with was Probably British and perhaps steamed??? HELP!

So bring us some figgy pudding,
So Bring us some figgy pudding,
So bring us some figgy pudding,
And bring it out here....

We wont't go until we get some.... Why??
