I made a happy discovery over the weekend. Homemade American-style Garlic Potato Chips. Tout simple! You need Russet potatoes, peeled or not, according to your preference and sliced as thinly as possible. Heat your oil to 375F. Take a big fat clove of garlic and smash it lightly (broken, but not mangled) with the broad side of a butcher/french knife. Drop the garlic with the thin sliced potatoes into the hot oil, stirring to keep separate, and cook until crisp and golden brown. WOW! These go amazingly with mile-high roast beef or turkey club sandwiches. |
