I am also very glad to not be running a fever today, and to see sunshine after three days of heavy rain and wind. And....

In about an hour the last of the cakes goes into the oven and I can finish cleaning up the mess from a full day of baking.


Favorite comfort food. Pinto beans, cornbread, cole slaw, and a tall glass of milk.

(Hey Rap, it is hard to milk a cow on the run, but at least she has gone ahead a churned the butter for you!)

But the thing is....I LOVE cow's milk, whether it is good for me or not.

Little Hawk, I agree with you about milk. It is intended for babies. American milk is problematic for all because it is pasteurized and that removes the enzymes you need to digest it. I get a sinus headache and infections from milk, ice cream, etc. The cultured dairy products are another matter, because there are enzymes reintroduced during the culture process that help with digestion.

Right now my milk products (yogurt, cottage cheese) are frozen. My eggs are frozen. My fridge isn't working correctly. Anyone need some quick-thaw raw eggs for anything?

While cow's milk is ideal food for calves, it is not good food at all for human beings. The consumption of cow's milk and other dairy products is a major contributor to a host of common illnesses. Milk clogs up your digestive system with mucus which coats the stomach and the intestinal walls and interferes with your ability to digest and absorb nutrients. It cause congestions throughout the body and aggravates the whole system, it causes skin problems, constipation, and is a probable contributor to a number of forms of cancer. The milk that is commercially sold is also full of hormones and chemical additives which are very bad for you.

The reason you hear about how great it is to drink milk all the time is simple. There's a gigantic dairy industry out there that wants you to drink the stuff, and they pay for the advertising that you here and see, even going to schools to propagandize children into drinking more milk every day of their lives.

Yuck. I can't stand milk, I have not been able to stomach it since I was 6 or 7, and I have no intention of drinking it. As for cheese...yeah, it tastes great, but I have found few other things that clog up my eliminative system as badly as a large amount of cheese does, so I eat very little cheese now.

This will sound like heresy to many of you. Fine. ;-) I will not be surprised by such a reaction, because people are creatures of convention and habit. They defend whatever they take for granted, and whatever they have been told.

Traditionally, farmers wanted higher fat content,as the fat is separated for other products....like butter, cheese and cream. Years ago, in some areas the milk was of no value....the cream (32% fat) was separated and sold, and the skim milk fed to pigs...Today, the whole milk is sold and separated at dairy plants.

Wondering about goats milk....some see it as superior to cows....you be the judge:

But I do know what I like in my coffee, and it ain't fat-free half-and-half. Condensed milk or even Coffee-Mate is preferable. (Actually, I'm girding my loins for my health care practicioner to tell me next visit to take all dietary means available to reduce my cholesterol intake.

If you take the fat out of cream what do you do with it? Which has just brought to mind a brilliant thought:

Cows are raised and milked on dairy farms. The fat is removed from the cream. Why not simply raise low-fat cows? We could have them giving low-fat milk and low-fat cream and low-low-fat half-and-half (adding two negatives makes a larger negative sum) and our dairy products wouldn't have to be manipulated as they now are! At the end of their useful life, the cows could be slaughtered and sold as low-fat beef!

I don't understand where all that fat comes from anyway, because cows don't eat fatty grass. I mean, when was the last time you heard someone take about "well-marbled bluestem" or "high-fat gramma"? I suspect that cows are actually carnivores and only eat fatty animals.

Ed, I'm entitled to get as worked up as I want when it comes to a food calculated to suck the joy of eating out of any food it touches, and not only that, it will bind up your innards worse that sucking down a bag of plaster of paris.

Applesauce works well as a fat substitute in breads. don't know about cakes.


I use butter in cookies, biscuits and scones - cholesterol be damned. It at least has some food value.

And shortening in piecrusts. Have experimented with canola oil crusts and with things like coconut oil shortening, but it is impossible to get that good, tenderly crisp and flakey crust with them. Lard makes the absolute best crust, but I gotta draw the line somewhere.

In THIS family, tho', lard seems perfect.

Low fat, no fat and fat free (some are interchangable) are regulated food product terms....and they do actually mean something to some consumers. But, they do not actually mean no what we would assume they do....no fat at all (but, I suspect yopu know all this anyway) -;)

There is NO SUCH THING as "low fat" or "non fat" sour cream. That is spackling compound.

I wouldn't use applesauce in something the consistency of a cookie. I would use it in a bread or cake.
