Traditionally, farmers wanted higher fat content,as the fat is separated for other products....like butter, cheese and cream. Years ago, in some areas the milk was of no value....the cream (32% fat) was separated and sold, and the skim milk fed to pigs...Today, the whole milk is sold and separated at dairy plants.

Wondering about goats milk....some see it as superior to cows....you be the judge:

But I do know what I like in my coffee, and it ain't fat-free half-and-half. Condensed milk or even Coffee-Mate is preferable. (Actually, I'm girding my loins for my health care practicioner to tell me next visit to take all dietary means available to reduce my cholesterol intake.

Bet Chongo doesn't have to worry about such silliness.

If you take the fat out of cream what do you do with it? Which has just brought to mind a brilliant thought:

Cows are raised and milked on dairy farms. The fat is removed from the cream. Why not simply raise low-fat cows? We could have them giving low-fat milk and low-fat cream and low-low-fat half-and-half (adding two negatives makes a larger negative sum) and our dairy products wouldn't have to be manipulated as they now are! At the end of their useful life, the cows could be slaughtered and sold as low-fat beef!

I don't understand where all that fat comes from anyway, because cows don't eat fatty grass. I mean, when was the last time you heard someone take about "well-marbled bluestem" or "high-fat gramma"? I suspect that cows are actually carnivores and only eat fatty animals.

Applesauce works well as a fat substitute in breads. don't know about cakes.


I use butter in cookies, biscuits and scones - cholesterol be damned. It at least has some food value.

And shortening in piecrusts. Have experimented with canola oil crusts and with things like coconut oil shortening, but it is impossible to get that good, tenderly crisp and flakey crust with them. Lard makes the absolute best crust, but I gotta draw the line somewhere.

In THIS family, tho', lard seems perfect.

Low fat, no fat and fat free (some are interchangable) are regulated food product terms....and they do actually mean something to some consumers. But, they do not actually mean no what we would assume they do....no fat at all (but, I suspect yopu know all this anyway) -;)

There is NO SUCH THING as "low fat" or "non fat" sour cream. That is spackling compound.

I wouldn't use applesauce in something the consistency of a cookie. I would use it in a bread or cake.

Any of my old recipes that call for that much fat, healthy or unhealthy, have been modified by me over the years. You can usually substitute something like apple sauce for some of the oil (like in my old pumpkin bread recipe) so there is 1/2 cup oil and 1/2 cup apple sauce. etc.

Except when I make spritz. I have used shortening, as the recipe calls for, but this year I'll try butter. They'll probably be like shortbread (maybe this is a shortbread anyway?)

MOM doesn't care what goes into them, just so long as she gets cookies this time of year. But if they're really unhealthy, she has begun to notice that when she gives people plates of her cookies that they get passed along. She's seen them turn up on other plates in places like meetings and schools.

Given the table of inversions shown above, Raparee's cryptic antagionsim translates as:

It is probable, extrapolating for chronic patterns of known attitude and vocabulary on Rapaire's long and colorful track on the MOAB that his incisive and illuminating remark meant to say:

But, as can be seen by anyone who traces the cryptographic analysis above, he doesn't spell very well. SO his insult is kind of compromised by a failure in execution. Ah, well, back to the Olde Drawinge Board.

From Land O'Lakes: Shortening:
1 cup butter or margarine (ie Becel) can be substituted for 1 cup shortening. When using shortening in place of butter or margarine, 1 tablespoon milk or water for each 1/2 cup shortening used may need to be added. DO NOT substitute vegetable oil for shortening when recipe calls for melting the shortening.

You can substitute mayonnaise for part of the shortening or margarine in your baking recipes. It adds moistness. Try using half mayo and half shortening at first.

Some healthy folks substitute Spectrum (From the Spectrum site):
We start with organic palm oil, extracted via manual pressing without the use of harmful chemicals. The oil is refined via cold filtration, conjoining oil and a small amount of water at cold temperature�a process similar to the making of ice cream. The palm oil is then whipped using nitrogen, resulting in creamy consistency similar to conventional shortening.

Organic palm oil is not hydrogenated; contains no trans-fatty acids; is lower in saturated fat than butter & has no cholesterol; is widely used in Europe as an alternative to partially hydrogenated oils; is extracted from the palm's fruit NOT the palm's kernel; can be grown organically in tropical regions; of the 3 tropical oils, palm oil is 50% saturated, while palm kernel oil is 86%, and coconut oil is 92% saturated."
