I let them age naturally in the yard, and then gather them. I find that four or five days is usually (but not always!) enough for a good "cure." If they need more than that I use a mashie or a niblick.

I steam them until a serrated-blade steak knife that is inserted in the middle, down to the choke, slips free easily. Then I try to pull off one of the outermost leaves; if it comes off easily I know the 'choke is done.

It depends on whether you're steaming them with or without the locally harvested golf balls. If they're recently retrieved from the yard, they're tender and steam quickly and compliment the artichokes nicely. If it is a ball that has lodged in a grassy hillock somewhere near the fence and been sun-baked for weeks or months, steaming takes considerably longer. And forget marinades, they just don't help. You need to serve them with a strong flavored sauce.

Moonglow had her share of tonight's salmon, cooked after she got home (it was a midnight supper since she closed her little DQ at the mall tonight). She picked up every microscopic bit, and I almost expected her to lick the plate. :)

Ha! I found fresh, wild, never frozen King salmon! Made some for Pat's coming-home dinner yestereve. Bought a BUNCH! and froze most of it. Like the Copper River sockeye that was already in the freezer, it'll get et. How about some of you folks come 'round and I'll cook up a whole filet? Fresh salmon fillet, baby Russetts cooked in olive oil and salt, asparagus with curried mayonnaise, an herb salad with huckleberry viniagrette dressing, and for dessert a blackberry "shortcake" with creme fraiche. Your choice of wine, beer, iced tea, etc.

Very tasty! Sauteed some Yukon Gold potatoes also, and had soft garlic bread sticks and fresh peaches for dessert. Mom, I saved you a piece of salmon.

On the menu tonight:

fresh Copper River salmon. Discovered on sale at Central Market on my way home from taking Moonglow to work this afternoon.

It would be nice to grill it, but we have heavy weather in the area this afternoon. I had a heckuva time keeping coals lit on the day of the surprise birthday party. I don't know if I want to bother. I might just bake it this time.

As to the civet cat, they actually are pretty bold and don't squirt all of the time. I've been at campgrounds out west where they are pests and after a while you find yourself stomping your feet and throwing rocks at them. They run off a little way, then come right back.

The menu, such as it is, for this week leading up to my nephews ordination (lots of people coming and going)

Sunday - noon - shrimp and pasta
Sunday - evening - Paella Romanesca

Monday - Beef stew w/ artisan rye bread; pear and endive salad

tuesday: Thai pizza

Wednesday: grilled shortrib and fontina sandwiches

Thursday - burgers

Friday: hazelnut encrusted haddock

Saturday - mixed bruschetta and croutades

Sunday Quiche

g*d willing I will NOT be shopping three times a day as I had to for the pre-wedding week.

way back when - when I was a scout leader, there was a week at summer camp where every evening Mama Skunk and her four bbies would parade through my tent - single file - on their way somewhere... I never got up to follow them. (to be honest, I tried not to move while they were walking by)

The next year I had the campsite across the road - and the first evening I heard someone yell "Holy SHIT" at about the time Mama took her walk...and found out the next morning she had only two babies that year...
