From: Janie

I know the refrain, but not the verses of this one. I think Uncle Dave Macon did it. The chorus is

Bake that chicken pie
put on lots of spice
Lord, how I'd love to have
A piece of that chicken pie.

Also, I have a vague memory of having seen the lyrics posted to a thread in the past, but couldn't find them when I searched. Hope this isn't a redundant request.

Thanks,

Janie

The Macon lyrics have been posted to thread 31041 (ADD- Uncle Dave Macon lyrics):
Uncle Dave Macon

Also linked by Geoff the Duck, above. As stated, the lyrics are not politically correct, but typical of the time period. They have not been checked against the recording at Honking Duck.

Subject: Lyr Add: CHICKEN IN THE BREAD TRAY and CHICKEN PIE
From: GUEST,Q
Date: 12 Jul 03 - 08:58 PM

Not the same song, but about cooking chicken pie.

Lyr. Add: CHICKEN IN THE BREAD TRAY

"Auntie, will yo' dog bite?"-
"No, chile, No!"
Chicken in de bread tray
A makin' up dough.

"Auntie, will yo' broom hit?"-
"Yes, Chile!" Pop!
Chicken in de bread tray;
"Flop! Flop! Flop!"

"Auntie, will yo' oven bake?"-
"Yes. Jes' fry!"-
"What's dat chicken good fer?"-
"Pie! Pie! Pie!"

"Auntie, is yo' pie good?"-
"Good as you could 'spec.'"
Chicken in de bread tray;
"Peck! Peck! Peck!"

Thomas W. Talley, Negro Folk Rhymes, Dance Rhyme Section, no. 11. Coll. 1920 or before. Notes indicate that the verses were occasional, sung by fiddlers in calling sets to a square dance. Also titled "Granny Will Your Dog Bite?"
There are a number of Hen House stealing rhymes in the Negro folk rhymes as well as white. One in Tally begins:
Nigger! Nigger never die!
He gits choked on chicken pie.
Black face, white shiny eye.
etc.

Lyr. Add: CHICKEN PIE
Frank Dumont, 1906
(The original of Uncle Dave Macon's lyrics, passed into Negro folk song)

If you wants to make an ole Nigger feel good,
Let me tell you what to do:
Jes' take a chicken from dat chicken roost,
An' take 'im along wid you.
Take a little dough to roll 'im up in,
An' it'll make you wink yo' eye;
W'en dat good smell gits up yo' nose,
Frum dat home-made chicken pie.

Jes' go round w'en de night's sorter dark,
An' dem chickens. they can't see.
Be sure dat de bad dog's all tied up,
Den slip right close to de tree.
Now retch out yo' han' an' pull 'im in,
Den run lak a William goat;
An' if he holler, squeeze 'is neck,
An' shove 'im un'er yo' coat.

Bake dat Chicken pie!
It's mighty hard to wait
When you see dat chicken pie!
Hot, smokin' on de plate,
Bake dat Chicken pie!
Yes, put in lots of spice.
Oh, how I hopes to Goodness
Dat I gits de biggest slice.

Thomas W. Talley, Negro Folk Rhymes, Dance Rhyme Section no. 90, "Chicken Pie," coll. about 1920. The song was in Negro, if not white, folk song only 14 years after its composition and publication by M. Witmark and Sons in 1906. Uncle Dave Macon recorded his version in 1927 (Vocalion 5148).
I have not checked for the original sheet music lyrics of Frank Dumont. The Negro folk version copied here probably differs from the original.

An error in the Thomas Talley book, Negro Folk Rhymes, or a later edition of the sheet music came out in 1906. The Levy Collection has this sheet music copy:
"Homemade Chicken Pie," Frank Dumont, J. E. Ditson and Co., 1886. The lyrics are a little closer to those of Uncle Dave Macon (neighbor's yard, etc.)

This leaves more time for the song to have entered the folk realm.

From the sheet music at the Levy Collection:

HOMEMADE CHICKEN PIE
Words and music by Frank Dumont, ©1886.

1. if you want to make a nigger feel good, I'll tell you what to do:
Borrow a chicken from a neighbor's yard and take it home with you,
Mix your dough, and roll him in, and while you wink you eye,
You get the flavor right up your nose of homemade chicken pie.

CHORUS: Den bake dat chicken pie; it's mighty hard to wait
To see dat chicken good and sweet a-steaming on de plate.
Den bake dat chicken pie, and put in lots of spice.
Oh, how I wish to goodness I had de biggest slice!

2. You go around when de night is dark, when chickens cannot see,
When de dog is tied up in de barn, den sneak up to de tree.
Catch their legs, and pull 'em down, fight like a William goat,
And if dey hollow, twist their neck and shove 'em under your coat.

3. Den pick de bones upon your plate, and eat de gravy too.
Save de claw, de legs and neck, to make an Irish stew.
Take de wishbone in your hand, and break it 'cordin' to law,
Den make a wish to have de luck to steal a couple more.

[Recorded under the title BAKE DAT CHICKEN PIE by Arthur Collins and Byron G. Harlan in 1907 and again in 1917, also by others; as BAKE THAT CHICKEN PIE by Uncle Dave Macon and others; also as CHICKEN PIE by others.]

Pat Sky has a funny spoof on this on his classic "Songs That Made America Famous." The gist of it is that he starts to record the song with the above lyrics, gets told he can't use "that word," tries various other terms as a substitute, gets told he can't use them either, and finally gives up and sings "If you wants to make a Polack feel good...."

Ah, the naivete, to suppose that all you need to make a chicken pie is chicken! Here are the ingredients for a traditional chicken pot pie, as made by my mother (born 1918):

water for the white sauce
onion
butter (to saute the onion)
flour to thicken the white sauce
cooked, skinned, boned, chopped chicken
diced carrots
peas
sage
salt
lemon juice
lard or shortening (for the crust)
more flour, for the crust

Today's cook would probably add black pepper, but my mother would not have.
