damme......i got the stuff for everything else....forgot the gingerbread...oh well. There is still Boxing Day.....eggnog and gingerbread...sounds a treat.

Gingerbread was a big treat at fairs in Medieval England. Not sure whether they used sugar or honey at that period though.

I love gingerbread.

Use Buderim Ginger - the link was in another thread - "best in the world".

I hope this isn't the rolled out, harder than bricks gingerbread cookies...but the nice,soft cake.....I'll try it...

I was going to send all my friends on the mudcat some of my special gingerbread for the holidays. But we're on an orange alert, which means the national guard is taking up all the parking places on my street, so the tank truck full of molasses (aka treacle) isn't practical. So, I'm doing the next best thing and sending the recipe.

Spicy Gingerbread


In a nice big mixing bowl combine

2 and 1/2 cups flour
1/2 cup butter (For best results use Amish butter. Margarine works too but...)
1/2 cup sugar
1 egg
1 cup molasses
1 seriously heaping teaspoon ginger
1 equally heaping teaspoon cinamon
1/4 heaping teaspoon cloves (For best results buy bulk spices, not the stuff in the little jars.)
3/4 teaspoon salt
1 1/2 teaspoon baking soda

When mixed thoroughly, add
1 cup boiling water.
(Make sure the egg is mixed in before you add the water. Poached egg doesn't taste good in gingerbread.)

Bake for 50 minutes at 350 degrees in a greased and floured cake pan.

If you're allergic to wheat, as two of my friends are, you can substitute 1 1/4 cup spelt and 1 1/4 cup barley flour.

One of my friends likes to put a piece in the microwave with a dollop of butter.
