I'm lovin' the summer squash too..but do you have any ideas about what to do with all those zucchini? I don't like it by itself..love it in spaghetti sauce or in zucchini bread...but uh...never really learned what to do with the stuff. I heard that if you cut them long wise, scoop out the center and fill the center with rice, cheese and tomatoes...that that's good...haven't tried it just yet though... Funny thing about all our tomatoes...one flat of plants was supposed to be Roma Tomatoes...was gonna can it for the winter...turns out that they are grape tomatoes.....we have tons of them...mostly still green...but the ones that have turned red...OH MAN are they good!!!! So Bobert...what are you doing with all YOUR 'maters and squash? Michelle |

We've given away some of the squash but eatin' it every day either fried 'er in caserole.. The P-vine gonna make up 'bout 8 loaves of zucinni bread tomorrow... We also been gettin' a bout two 'er thre cucumbers every mornin' and they good in sammichs or mixed up up with 'maters and onions for salad... Which we eta every danged night with dinner... Bobert |

From: GUEST,ClaireBear Date: 18 Aug 05 - 10:35 AM A similar but not identical zucchini treat: After you shred the zucchini, shake salt over it, toss it, and leave it to drain in a colander. After 15 minutes or so, come back and squeeze the water out of it. Now saute in a hot pan with a little olive oil. When it's done -- cooked, with a few golden bits -- take it off the heat and stir in an appropriately sized spoonful of pesto. Done! Now for the really good news: when you get the water out of the stuff, zucchini shrinks down a bunch. You can use up heaps of it this way. Plus, you can even do this with the big ones that you forgot were lurking in the garden until it was too late. Claire |

I even have some tomato plants that are taller than me and loaded to the hilt. I think maybe our "luck" lies in a friend who shared her horse manure pile with us...as this is the best tomato crop I've ever had!!!! Michelle |

The tomatoe plants are groaning under their burdens, peppers are producing profusely, eggplants are excellent, cukes are calling out to be picked daily and we had an excellent garlic harvest. We are currently up to our butts in veggies but not complaining about the cornucopia. |

From: Janie Date: 18 Aug 05 - 10:11 PM I slice squash, zuccini and onions (and sometimes tofu) and marinate them (recipe below) for 15 to 30 minutes. I drain them well, then grill them on the barbeque, or over high heat in a cast iron skillet. If I use the skillet, I will also melt a very small amount of butter in the skillet (for flavor) and quickly cook them until tender-crisp, and (hopefully) lightly browned. Marinade: 1/4 cup tamari 1/4 cup olive oil 1/4 cup leomon juice 1 teaspoon grated fresh ginger one crushed clove garlic (optional--really changes it) If left in the marinade very long, the squash and zukes get broken down by the acid and will not cook crisp. Still tasty--but the texture is ruined. If I don't quite have a full mess of snapbeans, I may also add them, or sweet peppers to the mix. For cherry tomatoes, pick a basket of fresh basil and buy some fresh mozzerella cheese. Cut the cheese into small chunks. Wrap a basil leaf around a chunk of cheese and a tomato and pop the whole thing in your mouth. Ummmmm! |
