I start by cooking some fairly spicy marinated chicken breasts on the bar-b-cue. When there done I slice them into strips. I place the chicken on my low fat pizza crust and then add salsa instead of pizza sauce. Top with onions, jalapenos and jack cheese and bake for about 15-20 minutes. Pretty tasty I have to say. So what's yours? |

The "meat" portion is smoked oysters or clams. Cut up (cubed) feta. Usually mushrooms. For variation I may put liberal dots of chipotle salsa on, or perhaps a roasted red peppers paste. As long asa the spinach is squeezed as dry as you can get it, and you take care not to glop it on too deep, it should be fine. I think the whole wheat crust helps it not to get mushy, since it has more body to it. Also, putting the cheese down before the spinach forms a barrier of (yeah, that's why we like it!) fat to keep things from getting too soggy. You should definitely give it a go, it's delicious AND relatively good for you! ~D |

Add 1 cup flour (I use organic, unbleached white flour), 1/2 teaspoon salt and 2-3 tablespoons olive oil. Mix and knead for a few minutes (I like a soft rather than firm dough as it is easier to spread out and lighter) Let rise in warm place for 1 hour then knock down and spread onto parchment lined 12 inch pizza pan then let rise again for 15 minutes. Top as you like then either slide parchment onto pre-heated pizza stone or place pan into hot (475F) oven for 10-15 minutes. Never fails and as good as (if not better than) delivery. |

I normally use 1 cup semolina with 3 cups white and I make two crusts. Also be sure to sprinkle semolina on the baking stone. I like to slightly bake the crust before adding the ingredients for a crustier pizza, but it isn't necessary. |

I like these, cause they mostly CAN be frozen to keep, and I just cut a quarter then that into 2 pieces. You can even add a small amount of extra ingredients too. I use a preheated 'foccacio' type flat toaster with baking paper - it is a gentle constant heat top and bottom. This gadget is a boon for the single person - can do pies, chips, meat, fish, Chiko Rolls, bread rolls, etc. Almost anything except soups or stews... :-) |

The other two get slapped in a 2-gallon ziploc and frozen. One miserable day when you need something quick and fun to eat, you pull one out to make a nacho pizza. Still frozen, stick it on a pan. Then spread with maybe 1/4 inch of refried beans (this does not work as easily if your crust isn't frozen, you might have to heat them up to spread them.) Then DOT with salsa, not too much, not a whole layer. Then spread with cheese (mixture of cheddar or jack and mozzarella, or whatever you have) and finish up with jalapeno slices. |

Subject: RE: BS: Favourite homemade pizza recipe From: Stilly River Sage Date: 10 Sep 06 - 02:19 PM My pizza dough is 1 tablespoon quick yeast (just mix it in the dry ingredients) 3 1/4 cups white flour (I used unbleached) 1/2 cup whole wheat flour 1/4 cup cornmeal (this from Jeff Smith, aka Frugal Gourmet) 1 tablespoon sugar (can use a little less, but do use some) 1 teaspoon salt 1 tablespoon wheat gluten, if I remember (not often) 1 tablespoon olive oil oregano, about 1 Tablespoon garlic powder, somewhere between 1 and 2 teaspoons 1 1/3 cup water I let the bread machine do the work, setting it on manual, but for years I made this with no machine. Either way it's good. Pre-heat pizza stone to 500 degrees. When the crust has finished in the manual setting or has risen once, then divide it into how many crusts you want (typically, like was mentioned above, I make a couple to eat and then bake the last two for about 3 minutes and freeze them to use later). When you have your dough rolled or shaped the way you want, get out the pizza stone and place the dough on it. Immediately use a fork to pierce a lot of holes over the surface of the crust or it will puff up like a huge pita. Assemble it quickly, then bake for up to 5 minutes. Slide it off of the stone onto a pan and put the stone back to heat a little more before the next crust goes on. The pizza will have done a lot of cooking on the stovetop while you put it together. Don't burn yourself on the metal handles for the stone. I make the crust from scratch, but then what goes on top depends on what is available. I usually use a commercial spaghetti sauce (Hunts works) then depending on who is eating, the toppings vary. My son wants just cheese. My daughter doesn't want cheese, but she does like mushrooms (fresh if we have them, otherwise, canned), pepperoni or sausage, and olives. I eat cheese and meat (I tend to prefer ham, its a bit leaner), onion, green pepper, mushroom, olives. Fresh tomatoes, if I have them, are nice sliced very thin. Making the dough is second nature, I make bread several times a week. But making sauce takes more time because I have to round up the ingredients. Sometimes I'll used canned tomatoes and make my own sauce. Only when I have a garden and a lot of the ingredients already (tomatoes, onions, garlic, green peppers) do I make sauce from scratch and freeze to use for pizza and such. SRS |

Back in those days, I had the time to cook almost entirely from scratch, which I still prefer to do. I experimented until I found a crust & sauce I liked. Since I had to use what was available in the military commisary or in the local market, I used the old fashioned basics. Most folks tell me that this is the best crust they have ever tasted. I used to make it the day or evening before having folks over, or put the extra pizza pan with crust in it into a giant baggie & freeze for a day when I needed it. This makes a couple of big pizza crusts: 1 tablespoon dry yeast 1/2 teaspoon sugar 1 Tablespoon honey 2 2/3 cups warm water 2 tablespoons olive oil 7 1/2 cups unbleached all-purpose flour 1/4 cup whole-wheat or rye flour 1 tablespoon coarse salt or 2 teaspoons fine salt 1 or 2 tablespoons of corn meal extra olive oil Proof the yeast for 5 to 10 minutes in 1 cup of warm water, the honey & and the sugar, until the yeast dissolves and the liquid begins to appear creamy. Add the remaining water and 1 1/2 to 2 cups flour, including the whole-wheat or rye flour. Beat this really well (a hundred strokes) until it's smooth and soupy, and then let it stand for 10 to 15 minutes, until it's bubbly and swollen. Add the salt and olive oil and proceed to stir in the rest of the flour by the cupful until the dough is stiff but still slightly sticky. Tip: Stir the dough in the same direction so that the gluten strands retain a smooth, consistent pattern. Knead the dough for about 5 minutes on a floured board. Put a couple of teaspoons of olive oil inside each of a couple of 2 gallon ziplock baggies, zip, & smush around till the inside is completely coated with oil. Place the dough in baggie, don't squeeze out extra air. OR: Place in an oiled bowl with a fitted cover, or in a kitchen sized trash bag coated inside with the olive oil. Let the dough rise in a warm (but not hot) spot, like on top of the fridge or in an old fashioned gas oven with the pilot lit but the oven not on. Let it rise for at about an hour. You can make the crust at this point, or put it in the fridge for a day, then punch it down & let it rise again in a warm spot. Sprinkle the pan or board with a little cornmeal, then toss, roll out, or can even smush the dough out in the pan with your hands. Top as you like. I used to get a Hunts tomato sauce that had some herbs already in it (they didn't have all the varieties of spaghetti sauces then), & add this & that to it for the pizza sauce. Sometimes, I used to top with thin slices of ham, pineapple tidbits, & sections of oranges I got at the local market in Korea. Yummy! |

The rapid or quick variety (I haven't read the label in ages, just grab the package I always use) can be mixed directly into the flour. It saves some time and bother. If you think your yeast might be old then proofing it is a good idea, to be sure it is still active. No point in wasting the rest of your ingredients if your yeast is dead. SRS |
