I just got a Crockpot (also know as a slowcooker or slow cooker or slow-cooker) for the first time in years and what was the first thing I decided to make in it? A cake. Yup, cake.

I had seen this recipe on the Family Fun website and had wanted to try it for almost a year. I made it while Dave and I were watching the four hour Bogdanovitch film on Tom Petty. By the third hour, we had pot full of amazingly yummy, gooey chocolate Mudcake that makes it own suace as it cooks.

Here's the recipe:

I did alter the recipe just a bit. I thought the recipe looked a bit small so I considered doubling it. In the end, I increased it by half. I also used Hershey's Milk Chocolate bars instead of semi-sweet choc chips cuz I like Milk Chocolate better.

The cake was so good it there ought to be a law against it.

Have any of you experimented with cakes in your crockpot? I found what seems like a good recipe for a banana Crockpot cake with a self-making sauce that comes from a pudding mix but most of the other Crockpot cakes seem to be what are called 'Dump Cakes" which is to say - open a can of some kind of fruit or pie filling, toss in crockpot, open a cake mix and dump on top. These dump cakes may or may not have a few sitcks of butter added. (blech).

I would like to find some nice sticky recipes such as the above cake. In the UK, they would probably call such things a form of pudding. I'd love a recipe similar in nature to the mud cake but for a lemon cake/pudding with lemon sauce. Another flavor I'd be interested in would be a good gingerbread type thing.

Any assistance out there?

RECIPE INGREDIENTS:
1 cup all-purpose flour
2 teaspoons baking powder
6 tablespoons butter
2 ounces semisweet chocolate (or 1/3 cup chocolate chips)
1 cup sugar (2/3 cup & 1/3 cup, added separately)
3 tablespoons plus 1/3 cup Dutch-processed cocoa
1 tablespoon vanilla extract
1/4 teaspoon salt
1/3 cup milk
1 egg yolk
1/3 cup brown sugar
11/2 cups hot water
Whipped cream or ice cream
1. Coat the inside of a 2 1/2- to 5-quart slow cooker with cooking spray. (Note: the cake's cooking time and final appearance will vary depending on your crock's size.)

2. Whisk together the flour and baking powder in a medium bowl and set aside. In a large bowl, melt the butter and chocolate in the microwave or over a pan of simmering water and mix well.

3. Whisk in the 2/3 cup of sugar, 3 tablespoons of cocoa, vanilla extract, salt, milk, and egg yolk. Add the flour mixture and stir until thoroughly mixed.

4. Pour the batter into the slow cooker and spread it evenly. In a medium bowl, whisk together the remaining sugar, cocoa, and hot water until the sugar is dissolved.

5. Pour the mixture over the batter in the slow cooker. Cover and cook on high for 1 to 2 hours, depending on the size of the crock pot.

6. Even when done, the cake will be very moist and floating on a layer of molten chocolate, but you'll know it's ready when nearly all of the cake is set and the edges begin to pull away from the sides of the pot. (As you check, try not to let the condensed steam from the lid drip onto the cake.)

7. When it's done, turn off the power and remove the lid. Let it cool for 25 minutes, then serve it in bowls topped with whipped cream or ice cream. Makes 6 to 8 servings.

So do you scoop it out, or will it come out if you flip the crock over?
I always put rounds of waxed or parchment paper in the bottom of cake pans to get them out cleanly.

Box of Yellow Cake mix and a can of Peaches, we used to do this in a dutch oven at summer camp.(Make sure the liquid in the peaches equals the liquid called for by the mix}

Well, I've been a slow cooker fan for years and I've cooked joints of meat, casseroles and soups but never desserts and puddings. So, I've just got out my slow cooker recipe book and found all sorts.

I'll tell you the recipes I've got and if you fancy any of them I'll type them up for you (but not tonight!)

zesty orange pudding
ginger pudding
caramel custard
bread and butter pudding
apple and sultana roll
creamy rice pudding
chocolate and pineapple upside down pudding

As soon as I saw Mrs Dave's post I thought "That's an upside down cake!" and eanjay's reference to upside down pudding seems to support such a term. But I'm in Oz and northerners reckon there's a lot of upside downness around Oz.

Even though I don't have a crockpot it sounds yummy!

And I reckon I now know how to con Liz.

Actually, in the Pogo comic strip, Mizz Beaver used to say that the fastest way to a man's heart is "through the soft underbelly". She alway punctuated that with a swing of her fist.

Cooking oil in an aerosol can. A wipe of butter or margarine, or even oil, leaving a thin film will usually do the same trick.

I am a kindergarten teacher. One of the stories in our reading series is Bunny Cakes. One character in the story makes his grandmother an earthworm cake. I discovered the crock pot mud cake recipe and we made it together in class. We served it with Gummy Worms. I also made pistacio pudding (caterpiller frosting)to spread lightly on each serving. IT IS A GREAT HANDS-ON TEACHING/LEARNING EXPERIENCE!! NOT TO MENTION LIP SMACKING ABSOLUTELY DELICIOUS CAKE.

This reminds me of the so called 'magic cake/tart' - you just bung all the ingredients together, and they sort themselves out.

From memory, it included coconut, flour, and a few other thngs - the principle is that certain things float to the top, and it forms a sort of self saucing pudding.

I can't help thinking of this thread title as one of those euphemisms, like 'crap on a cracker' or 'frick on a stick'...

I like the idea of shouting 'cake in a crockpot' the next time some git tries to drive me into a wall.

Chocolate and pineapple upside down pudding

175g margarine
175g caster sugar
3 (size 3) eggs
200g SR flour
5ml baking powder
25g cocoa
1 small can (4 slices) pineapple rings

Rub the inside of the cooking pot with butter and line the base with a greased circle of foil, cut to fit.
Switch the slow cooker to HIGH and pre-heat for at least 20 minutes.
Cream the margarine and sugar until light and fluffy.
Add the beaten eggs gradually.
Fold in the sieved dry ingredients, adding sufficient pineapple juice to give a soft dropping consistency.
Arrange the drained pineapple slices on the foil and carefully spread the chocolate sponge mixture evenly on top.
Replace the lid and cook for 2-3 hours or until cooked.
Take care when lifting the lid not to let condensation run onto the sponge.
Dry any moisture from the rim of the pot.
Turn the pudding onto a warm serving plate.
The remaining pineapple juice may be thickened with a little arrowroot or cornflour and served as a sauce.

I may even try it for Christmas, I was looking for a suitable pudding that could be transported easily and left to cook on it's own.

Here's the banana one. I have one cooking in the Crockpot as I type:

Crockpot Banana Cream Upside-Down Cake recipe

Source: Busy People's Slow Cooker Cookbook by Dawn Hall

3 egg whites
2 medium bananas, smashed to equal 1 cup
1/2 plus 2 cups water
1 (18.25 ounce) box yellow cake mix (do not
    make as directed on box)
1 (3 1/2 ounce) box banana cream, cook-and-serve
    pudding mix, dry (do not make as directed on box)

Heat a slow cooker on HIGH. Spray the cooker with nonfat cooking spray.

In a large bowl beat the egg whites with a mixer on high speed until soft peaks form, about 1-2 minutes.

In a separate bowl, put the bananas. With the mixer beat on high until the bananas are pureed. Put 1 cup of the pureed bananas in with the egg whites. (Discard any extra banana mixture.) Add the 1/2 cup water and the DRY CAKE MIX to the eggs and bananas. With the mixer beat together for about 1-2 minutes, scraping the sides of the bowl now and then. The batter will be thick.

In the prepared slow cooker stir together the DRY PUDDING MIX and the remaining 2 cups of water. Stir until completely dissolved. Pour the prepared cake batter and the pudding ,ixture into the slow cooker. DO NOT STIR! Place a paper towel on top of the slow cooker. Place the lid of the cooker on top of the paper towel to cover. Cook on HIGH for 2 hours.

Place a large serving plate with an edge on it (so the sauce won't overflow off the plate) upside down on top of the slow cooker. Holding the slow cooker and plate firmly together, with both hands, carefully flip the cake upside down. It will be steamy hot so be VERY CAREFUL! The sauce will ooze down the sides of the cake.

Yield: 12 servings

Calories: 227; Fat: 4 gm; Cholesterol: 0 mg; Carbohydrate: 46 gm; Dietary Fiber: 0g; Protein; 3 gm; Sodium; 359 mg.

NOTE - this is another one of those "sorts itself out" type of Crockpot Cake. i put the cake batter in FIRST and then poured the pudding mixture on top and I could see that it looked a lot like the Mudcake in that the intended sauce sort of penetrates the thicker cake mix when you pour it on top. it will probably migrate to the bottom just like the Mudcake. it smells amazing!

FYI - I had a bad headache last nite when I was adding that last instruction on the banana Corckpot Cake and I got it arse-backwards.

I didn't mix the pudding in the crock - I beat it in a bowl and then poured the pudding sauce stuff in first. THEN, you put the very thick cake batter in. I even got away with using defrosted year old egg-whites from the freezer! Some recipes are sooooo forgiving.

I would guess that you could do a version of the Banana Cream Upside Down Cake as a Coconut Cream Upside Down Cake. Just use a coconut flavored Cake mix. Instead of banana puree (which acts as the fat), you could use 1/2 cup coconut milk mixed with 1/2 cup vanilla yogurt. Instead of the banana Instant pudding, you could use Coconut instant pudding. When you dish it out, sprinkle some toasted coconut on top and viola! Coconut Creme Upside Down Cake from a Crockpot.

I have found that you can easily use double the amount of chocolate chips or broken chocolate and still have the cake set properly. Good news, eh?

Also, I have switched to using vanilla paste instead of extract since I didn't like the alcohol taste in the cake. Because its made in a crockpot, the alcohol doesn't cook off, it condenses on the sides or lid and drops back into or onto the cake.   Maybe it would have been better to put some paper towels over the cake and under the lid like the banana Cream upside down cake. I dunno. I just find that using vanilla paste solves the problem.
