BS: My Oatmeal Exploded

08 Jul 08 - 08:09 AM (#2383656)
Subject: BS: My Oatmeal Exploded
From: SINSULL

It is one of those days. Put my instant oatmeal in a cup with water, set the microwave and came back to find it erupting and pouring great rivers of sticky grey lava all over the company kitchen.

It's going to be a great day.

Hey Janie. I made a copy of the prayer you posted in Mick's thread. Maybe we wise women should set a time and recite it together for Mary Lou, Ciara and Mick.

If God had intended us to eat oatmeal, He'd have made us all Scottish.

Bacon and eggs is the proper breakfast!

Now ask me how many times I've been spattered with hot grease....

Microwave oatmeal = wallpaper paste

It only takes about 10 minutes to cook it up properly at home BEFORE you go to work! You'll do your body a world of good if you take those few minutes. :)

(I say this while remembering my mother speaking of the really old fashioned oatmeal that wasn't "rolled" and had to sit overnight, simmering in a pan on the back of the old wood stove.)

My grandfather ate a huge soup bowl of porridge every morning, along with two poached eggs, sausage, ham or bacon, another soup bowl of soaked home made bread toast with butter and sugar, one or two pieces of my grandmother's lard-pastry apple pie, and vast quantities of tea.

Mind, he died of heart failure at sixty-six.

Subject: RE: BS: My Oatmeal Exploded

SINSULL, here is a cool way I've discovered to make oatmeal...and it doesn't get all sticky and yukky, nor does it boil over.

I pour a serving of oatmeal in a bowl just before going to bed at night. On top of that oatmeal I pour rice milk (which I greatly prefer to cow's milk)...until the bowl is full. The bowl of oatmeal stands there overnight and the rice milk soaks into the oatmeal and softens it.

In the morning I get up, brush my teeth and wash up, then I get the bowl of oatmeal, put some honey on top, stir it in, and it's ready to eat.

It's room temperature, totally "cooked" (so to speak), but it has a different consistency from oatmeal that has been boiled, because it doesn't turn all slippery and slimy like the cooked oatmeal does. It's far more palatable, tastes wonderful, and presents absolutely no problem in cleanup of the utensils afterward. No slimy gunk to clean out of the pot. No trouble whatsoever.

I highly recommend this method. If you want your oatmeal hot, though, well, then I guess you could still do this method of mine and just put it in the microwave for a minute.

Keep in mind that food that is not subjected to high temperatures is far higher in vitamins and other good stuff, because high temperatures destroy much (if not most) of the nutritional value in food.

In a large, high-sided ceramic bowl (I bought mine from Woolworths) put 1/2 cup of porridge oats, 1 cup of milk and 1/2 cup of water. Stir and microwave, at full power, for 4 MINUTES.

Overcooked oatmeal is AWFUL! Yes, it does taste like wallpaper paste.

If you want no gluey residue in your oatmeal at all, then don't cook it, soak it. An hour of soaking in milk or rice milk or soya milk is enough to do the trick.

So, SINS, would you like us to give you Oatmeal cooking lessons at the next Getaway. If you're using instant oatmeal, heat the water to boiling, and THEN add the oatmeal.

Regular oatmeal is much cheaper, and you can microwave it just the way you tried to cook the instant stuff - just use a large bowl and cover it.

My Polish wife cannot bring herself to use a plate or bowsl that is larger then the food she's eating. She has been brought up to believe that using a large plate is wasteful. Therefore, she tends to spill stuff a lot. Are you Polish?

The library paste recipe above is very similar to the stuff we made in Oz when I were a lad, but schools often bought a commercially-made version (in conical bottles with a stick-brush-cap combo) known as "Clag". You can't put the "only takes 10 minutes" quote that close to the "microwave oatmeal" quote without people thinking I would cook oatmeal in a microwave for ANY amount of time, let alone 10 minutes. I was citing stovetop time for "old fashioned" oats cooked in a pan with a cover on it. Using water and a little salt. (I also like raisins in my oatmeal, but the kids won't eat them, so I don't fix it that way very often). Serve with brown sugar and soy milk.

The very first day I worked in a daycare with four year olds, I set up a pasting project using the non-toxic white glue the centre provided. After a bit, a cheerful small boy came and sat beside me and 'chatted me up' for a few minutes. Then, looking at me with a big grin, he dunked his half-inch brush in the glue container, extracted an enormous gob... and stuck it in his mouth and swallowed it.

I've seldom been so shocked in my life. My expression must have been pricelessly funny, because the little demon burst into peals of laughter, and didn't stop chuckling all the way to the bathroom to get his mouth washed out.

LH, I love rice milk; it's the only kind of milk I use. Since I am watching my carbs, I don't think I'll try your recipe, but it sounds good.

I put water on to boil, add brown sugar, stir it in 'til it dissolves, then pour in the oats. I cheat and get the one minute ones. By the time I've stirred them in they are almost done. I then put them in a ceramic bowl in which I have placed a very small amount of butter. Oatmeal melts it, I stir and eat. Yummy!!

Yeah, that type of oatmeal cooks very fast. Your method sounds like a good one, Kat, rather similar to what I used to do before I got into the soaking routine instead.

I find rice milk totally delicious, and it's healthful too, but I really can't stand cow's milk. Nothing in nature consumes cow's milk except baby cows. That should tell people something.

I love oatmeal & I've had it explode once - the only time I've ever cooked it in a microwave. Normally I cook it with water & serve it with buttermilk & bananas, no sugar cos bananas are sweet enough. But dates sound wonderful - I love dates ...

We were camping & I was in a line of folks holding cereal bowls of water & oats. I'd never used a microwave, & when it was my turn I was told the amount of time needed to cook it (seconds) so set the timer, waited, opened door & faced the overflowing bowl.

Oops, said my friend, I forgot to say open half way thru & stir.

Then I cleaned up while the queue of folks holding their bowls waited, dunno why I didn't ask him to clean up the mess.

Next day I didn't have oatmeal.

Sinsull, the mug's your problem. The instructions on the oatmeal box say to put the ingredients in a 'medium, microwaveable bowl.' The larger bowl allows for the foaming which occurs during cooking.

Simple, eh?

Now, let's define folk music.

=========
I usually have to be forced to eat oatmeal. I have found, however, that the texture of Old Fashioned Quaker Oats is much nicer than that of the cheap stuff. Also, if I add a little butter or similar, it goes down better. It's no different whether cooked on the stove top or in the wave. The wave is faster and saves dish.

I remember a cold morning in the mountains on a geology field trip, long ago. Our student cook had prepared oatmeal. I would swallow some, and my esophagus would send it right back up to my mouth. 'We're not eating this!' is what my body seemed to be saying. A little margarine solved the problem.

Subject: RE: BS: My Oatmeal Exploded

The less time the cereal takes to cook the more it is processed, so the fewer health benefits you get from it. The slow cooking oats are much healthier.

Just so you know. By the time you've bothered to spend several times more to buy little packets of pre-cooked, pre-chewed cereal to add hot water to, you've got less nutrition than that wallpaper paste. (Personally, I used to eat the school paste, which might have been what you're calling library paste, but that's where I encountered it. It was a gelatinous sweet white substance scooped out of a large container into bowls or old tuna cans or onto chunks of cardboard, as I recall. You'd be insane to actually USE that stuff in a library.)

Dave, just put enough oatmeal in a fairly large bowl so that you will have one serving. Then pour in enough of the Soya milk to rise to the top of the oatmeal and to just cover it. That should do it about right. Let it stand for an hour or more. Overnight works very well.

Liz, it has become my firm opinion that dairy milk is not good stuff for most human digestive systems...although I'm sure there are some people who can handle it okay. It depends on how your system works. A great many people have trouble digesting milk and dairy products.

Now edible plants...they are good stuff for human digestive systems, and rice milk or soya milk are simply products made from edible plants plus water.

I loved milk when I was a young child, but I found that by about the age of 6 or 7 I didn't like it at all anymore. It had become quite unpalatable as far as I was concerned. My body was telling me strongly "don't drink that stuff". Now that makes sense, because I was coming to the natural age where one is weaned off mother's milk and eating other stuff instead. All animals do that. They only drink milk when they are infants. After that they eat either plants...or fruits...or meat if they are predators...or all of those if they are omnivores.

My decision to substitute rice milk or soya milk for cow's milk is based on two things.

1. I don't like cow's milk anyway.

2. I don't think it's any good for my health or my digestive system...both of which don't react well to a diet heavy in dairy products (including cheese).

If dairy works for you, though, that's fine with me. We aren't all the same when it comes to diet.

09 Jul 08 - 03:40 PM (#2385007)
Subject: RE: BS: My Oatmeal Exploded
From: Stilly River Sage

Little Hawk, the reason many humans can't digest dairy milk effectively is because it was pasteurized. Pasteurization kills off the enzymes in the milk that aid digestion. Raw milk doesn't present those problems.

Soy milk isn't always the best choice either; I think most of it is from genetically modified seed these days.

I love dairy products: milk, cheese, cream, butter. Pre mortem & post mortem cows too. Cows are my friends. Unfortunately, they aren't my arteries' friends or my waistline's friends so I limit cow products.

Your office microwave is probably one of the new nuclear powered ones. We have one at work. You put a mug of water in for tea, set it for 1 minute and the glass mug melts.

Little Hawk's porridge recipe sounds good except for the soy milk. Maybe the rice milk tastes better, I've never had that.

I don't drink cow milk or any milk, though I do put skim on cereal about once a week, and in my coffee. I like my cows' milk in the guise of cheese, curds, yogurt and ice cream. (and a leetle bit of whipped cream this week because our local strawberries are ripe - the best strawberries on the planet, and only available for about three weeks.)

Soy though, should be confined to soy sauce, IMO. I'm one of those people who cannot bring myself to like the taste of soy products. Tofu makes me shudder. Soy milk makes me nauseous. Soy ice cream is an abomination. Soy burgers are awful!

When I was a vegetarian, I made my meat-like substances out of raw peanuts, millet, kasha and such. Providing you aren't allergic, ground peanuts are remarkably good mixed with grains, garlic, onion, a little tomato paste, and herbs, flattened into patties and fried or broiled.

Rice milk is much preferable to soya milk as far as I'm concerned. It has a lighter, fresher taste and a lighter consistency. You can usually get it in either "original" flavor or vanilla. Both are quite good.

Subject: RE: BS: My Oatmeal Exploded
From: lady penelope

Blech. If you have to flavour it to be able to eat it, maybe you shouldn't bother, eh?

I try to keep my intake of soy products to a minimum because soy is naturally high in trans fatty acids (in high quantities it's a carcenogen). Soy milk is also loaded with sugar to make it palatable and rice milk is similar, though not quite as sugary or with the TFAs.

I don't drink milk in anything like the quantities I used to when I was a kid, but then I have a better all round diet and get my calcium etc from a more varied food supply. If you're lactose intolerant try goat's milk or sheep's milk. Their make up is far nearer human milk. Although, ever since watching Red Dwarf I've been curious about dog milk... *G*

Chick peas make a great base for veggie burger mixes and I generally steer clear of most textured vegetable protien (be it tofu, basic TVP, or things like Quorn) as I'm just naturally suspicious of anything that processed.

Perversly, I found that I like oatmeal that's made really thick with some honey stirred in and then left to go cold (like the drawer thing mentioned earlier). It goes all nice and chewy....

You would never use 'Soy Milk' if you saw the sort of 'oil refinery process' used to make it commercially. The 'home made' stuff is somewhat different.

It was a revelation to me when I discovered that Old Fashioned Quaker Oats (or the generic equivalent) don't have to be cooked! Now I take a tupperware container of old fashioned oats, mixed with some cinnamon, walnuts and cranberries or raisins to work. I make this up every Monday and take enough to last the week - then for breakfast every day I put some in a bowl, add some water, microwave for one minute and it turns out delicious. Sometimes I add a spoonful of sugar, or half an apple, and occasionally a splash of milk, but it comes out fine with just water.

For the milk - I enjoy soy milk, rice milk and/or almond milk which I use to make smoothies. Each has a different taste and texture. For cereal and coffee I use cow's milk but I never drink it straight.

Lady Penelope, do you have a recipe for chick pea based burgers? That sounds good!

Yeah, almond milk is good too. The Rice Dream "Original" had absolutely nothing in it but brown rice and water. Period. The sweetness came from the brown rice itself since you can make a very nice sweet syrup from brown rice.

However, they just couldn't leave well enough alone. They have since "enriched" it with various other stuff. I'll have to take a look, see what it is, and report back.

It's still a lot better for my innards than milk, because milk coats the stomach and intestinal walls in such a way as to considerably interfere with the body's ability to absorb nutrients.

As for calcium, you can get all the calcium you need by eating a good variety of raw greens. Guess how an elephant or a buffalo or an elk gets his calcium (and protein) to build those big strong bones and powerful muscles? By eating fresh growing green stuff.

LOL! Yeah, well, I don't remember the exact age it was, and I have no conscious memories of being breast fed at all...I just remember that I liked milk a lot when I was very young, mostly drinking milk from a glass with meals, but I discovered that I didn't like it at all anymore after a certain point, and the transition from liking it to not liking it was pretty definite when it occurred. I link that to the natural process that occurs with all mammals in nature. They start out drinking milk, they end up transitioning to adult animal food.

I think my shift in that sense was instinctual, and probably linked to signals from my nervous system as well.

Larger herbivores aren't entirely vegetarians, of course. Mixed in with the four to five hundred pounds of vegetation an elephant consumes daily will be several pounds of beetles, moths, caterpillars, various larvae, mantids, spiders...

And Bambi! Bambi's been caught, in the spring at several locations, not only stealing birds eggs from nests, but eating the nestlings as well!

I think, given a reasonable knowledge of nutrition, it's best to eat what makes you feel healthy. Sometimes that's veggies and grains. Sometimes it's milk and meat.

For me, the dairy industry is a crock. As distinct from a churn.

Ah well, to each their own. Lovely Jerseys, chewing their cud, producing milk that is 30% butterfat, were favoured companions when I was young; how I wished (then, not now) that I could clear my nose by poking my tongue right up each nostril, as those Jerseys did.

And I worked the churn to make great butter, although it ached my arms.

And I don't think I'll voluntarily become a vegetarian while a roast leg of two-tooth, impregnated with garlic and rosemary is still available, along with baked onions, potatoes, pumpkin, carrots and parsnip. Being an omnivore is great!

Larger herbivores aren't entirely vegetarians, of course. And swamp wallabies (Wallabia bicolor) are recorded, in the wild, as seeking out dead flesh to consume; friends of mine thought the swampy's meat eating might have been predicted from the different dentition they had from all the other macropods.

Cheers, Rowan

When I was a kid, and even now, sometimes, dry oatmeal was a favourite snack...in a cup, eat it with a spoon. Have some water ready when your mouth gets too dry!:-)

Rice milk has a nutty flavour which I really like. I don't do too much tofu, but I don't have a problem with its taste; it really does seem to take on the flavour of whatever I cook it with and it was a good way to add some protein. Now, I am more ltd. on how much protein I take in, so I don't use it any more. I do use soy crumblies for tacos and goulash. Once in awhile I'll have a Bocca burger with sautéed onions and mushrooms.

For sure, everyone should eat what makes them feel healthy, and that's not the same for everybody.

I've gone through periods when I ate a vegetarian diet for several months, and I always felt great while I was doing it. Most of the time, though, I eat as an omnivore, and I also feel good doing that, providing I still eat large amounts of vegetables and fruits and I go easy on the heavier stuff and eat not too much of the baked goods and the sugary stuff.

I LOVE seafood. Any kind of seafood. I prefer eating only small amounts of beef occasionally and hardly any pork, but I like chicken a lot.

My mood and my health improves when I don't drink coffee, and don't eat any junk food or fast food, and when I don't eat much deep fried stuff (like french fries) or greasy stuff.

My mood and my health improves when I remember to drink enough water each day.

And getting enough exercise and sunlight and fresh air is a big factor too.

Little Hawk, both of my kids nursed until they were about 2 1/2. The first 6 to 8 months it was exclusively milk, then as food was added nursing was relegated to morning, bedtime, and nap time. By age 2 1/2 it was barely there and easy to stop, but they knew to ask for "milk" when they wanted to nurse.

I had my daughter in the grocery cart seat in the grocery store one day and when we walked past the dairy case she asked what all of those white jugs (!) were. I answered "that's milk." I kid you not, this child did a double take--she looked at the case, she looked at my chest, and back and forth a couple of more times, trying to figure that one out. I took pity on her exploding imagination and explained about cows, and we went from there. But these kids didn't drink cow milk until they were past the mom milk stage, and then we found they had allergies and got a lot of bronchitis and sinus infections until we stopped with the dairy.

We've put cheese and yogurt back into the diet. Too bad about the cheese effect--it is a wonderful food in moderation. Don't waste your time with the average dull stuff. If you can only eat a little, get the really good cheeses.

Oh, there are certain cheeses that I love the taste of, Stilly, but I've found that if I eat more than a very small amount of them it ties my system up in knots.

Dairy products in general (milk and cheese) tend to create a lot of mucus in people's systems, and that can contribute to colds, sinus problems, and chronic bowel problems, all due to the buildup of mucus. Same goes for white flower-based foods, white breads, and baked stuff generally. It's not that I don't eat any such stuff, I just try not to eat much of it anymore...or I eat it on rare occasions. My "comfort" food is mostly fresh fruit or dried fruit.

Yogurt on the other hand...my impression of that is that it's pretty good stuff healthwise.

Yogurt can be lovely stuff. I really need to start making it again, it's so easy and home-made is very good.

I'd like to find out how to make the kind I got in the Netherlands, though - called Bavarian, I think, very creamy.

If I lived in the Netherlands, I'd be dead of overeating by now - so many foods there that appealed to me! Whoever would have thought of selling, from the local dairy, groats in buttermilk? I don't even like buttermilk, but I loved getting these half litre milk bottles full of goopy goodness! And the awesome cheese shops! The delicate wafers stuffed with thick whipped cream sold on the street by pastry vendors! And that's just the dairy products...

10 Jul 08 - 01:36 PM (#2385860)
Subject: RE: BS: My Oatmeal Exploded

No need to bludgeon! One of these may work.

Recipe 1

Chickpea burgers with Tahini sauce
1 19-ounce can chickpeas, rinsed
4 scallions, trimmed and sliced
1 egg
2 tablespoons all-purpose flour
1 tablespoon chopped fresh oregano
1/2 teaspoon ground cumin
1/4 teaspoon salt
2 tablespoons extra-virgin olive oil
2 6 1/2-inch whole-wheat pitas, halved and warmed, if desired

Tahini sauce
1/2 cup low-fat plain yogurt
2 tablespoons tahini (see Ingredient note)
1 tablespoon lemon juice
1/3 cup chopped flat-leaf parsley
1/4 teaspoon salt

Recipe 2

2 tsp vegetable oil
3 green onions (including tops) chopped
2 cloves garlic, minced
1 tsp each dried oregano and chili powder
1 cup diced sweet red or green pepper and/or ½ cup chopped pickled hot peppers
Half tomato, chopped
1 can (19 oz) chick-peas drained and rinsed
1/3 cup dry bread crumbs
2 tbsp cilantro or parsley, chopped
1. In nonstick skillet, heat 1 tsp of oil over medium heat and cook onions, garlic, oregano and chili powder, stirring, for 2 minutes. Add red pepper and tomato. Cook, stirring for about 3 minutes or until pepper is tender and liquid is evaporated.
2. In food processor, mix pepper mixture with chick-peas; transfer to bowl. Stir in bread crumbs, parsley, and salt and pepper to taste until well combined. Pressing firmly, shape into 4 burgers.
3. In nonstick skillet, heat remaining oil over medium heat and cook burgers for 4 minutes on each side or until heated through.

Recipe 3

4 tbsp olive oil
110g/4oz onion, finely chopped
2 garlic cloves, crushed
1 small dried chilli, crumbled
1 tsp ground cumin
1 tsp ground coriander
¼ tsp ground turmeric
½ lemongrass stalk, finely chopped
200g/7oz chestnut mushrooms, finely chopped
1 lime, juice only
salt and freshly ground black pepper
1 x 400g/14oz can chickpeas, rinsed and drained
75g/3oz fresh breadcrumbs
few drops Tabasco sauce
2 tbsp chopped fresh coriander
Method
1. Heat three tablespoons of the olive oil in a large frying pan and gently fry the onion and garlic for five minutes, stirring frequently, until softened but not coloured.
2. Add the chilli, cumin, coriander, turmeric and lemongrass and cook for three minutes. Add the mushrooms and lime juice and cook for another five minutes, until softened. Season, to taste, with salt and freshly ground black pepper and tip into a large bowl to cool slightly.
3. Place the chickpeas into a bowl and crush with a fork until broken up, but still chunky (or do this in a food processor). Transfer to the large bowl with the mushroom mixture and add the breadcrumbs, Tabasco, coriander, salt and freshly ground black pepper. Mix well with a fork.
4. Sprinkle some flour on a large plate. Flour your hands and shape the mixture into six patties. Wash and re-flour your hands if they get too sticky.
5. Chill the burgers on the plate in the fridge for a few minutes or until needed.
6. Heat the remaining tablespoon of olive oil in a large pan and fry the burgers for 3-4 minutes on each side, or until golden-brown and heated through.

LBK, if one's hungry, one doesn't bother waiting three days while starving an animal in order to convince it to do its own job of stuffing. Though I'd be personally revolted by eating a dog, I perfectly understand some people have no such qualms, and are not to be faulted for it. Sorry Dave, that doesn't mean soya milk lowers your cholesterol. It just means you're not eating as much in the first place. If you didn't drink the soya milk at all you wouldn't be taking in any extra cholesterol at all! This still wouldn't lower your cholesterol, it would just mean you're not adding to the problem.

Lady Penelope - the idea was not to put apple juice in milk! Good lord. I think it would curdle most horribly.

No, the idea was to soak the oatmeal overnight in apple juice rather than in milk or soya milk or rice milk. This would produce apple juice flavored oatmeal, which I should think would be quite good either hot or cold. It would taste a bit like apple pie or apple turnovers, most likely.

Well, cor blimey lady P. I must be as daft as Parker. I have read, re-read, read it upside down and inside out and I still cannot get The inclusion of at least 25g soya protein a day as part of a diet low in saturated fat can help reduce cholesterol in the blood to mean anything other than soya protein as part of a low in etc diet helps reduce cholesterol! Seeing as it goes on to say This pack contains 5g per 250ml glass which is one fifth of 25g I can only conclude that drinking a 1250ml carton (which oddly enough the 12.5% extra one is!) will help reduce cholesterol in the blood. It's a bloody lot though - Don't think I could manage it!

I'm not disputing you, honest! But it seems that either -
a) They are telling porkies, in which case the should be taken to task
b) I am misreading it altogether, in which case I need help to understand or
c) You are mistaken about the cholesterol reducing properties of soya - In which case a lot of other 'cholesterol reducing' are in big trouble!

BTW - Oatmeal in itself helps as well. Mine soaking in the fridge, getting ready for breakfast, as we speak:-)

Aha! Just found this -

Previous studies had shown that eating large amounts of soy protein lowered cholesterol. Subsequent research found that soy only minimally reduced LDL ("bad") cholesterol and had no effect on HDL ("good") cholesterol or triglycerides. In addition, this reduction came from eating significant amounts of soy, not the relatively small amounts found in many food products. Separate analysis of soy isoflavones found they had no effect on lowering LDL cholesterol.

Based on its current findings, the AHA committee said it would not recommend soy-based foods and supplements for reducing cholesterol. However, nutrition experts say soy-based foods are still good for you because they contain less saturated fat than meat does and also provide vitamins and minerals.

So the packet is only telling half the truth! Ignore a, b and c above. Make it a bit of truth in the packaging and lots more of the truth in your statement! At least my understanding was OK;-)

Cheers

Dave

Dave, the Key weasel phrase in the text is "The inclusion of at least 25g soya protein a day as part of a diet low in saturated fat can help reduce cholesterol in the blood" This is the way that advertisers use UNPROVEN data to support their cause, if it was verifiable and PROVABLE they would say " Is PROVEN to reduce" they know it dont work for everyone and is not quantifiable, thus the circumlocution in their blurb. It is on a par with orange drinks that say "contains fresh orange juice" Sure it may be one drop per hundred litres but so long as it is verifiable....

I'm glad you like it, Dave. The oatmeal can absorb a surprisingly large amount of liquid overnight so you will have to experiment with how much milk (or whatever other liquid) to add...and you can always just pour a little more in when it's ready and stir it up with a spoon to get the same effect.
