Can anyone suggest a subsitute for coconut milk? I'm making Jamaican peas & rice and my wife is allergic to coconut milk.

Maybe almond milk or hazlenut milk? Although nothing tastes like coconut milk.

I used to be allergic to coconut until just a few weeks ago. I had some acupuncture allergy elimination treatments, and I'm not so much allergic to coconut milk any more. I can't eat the things I used to be allergic to every day, or I become allergic again, but I can eat them often now without getting sick.

Heavy Cream (probably the closest substitute for mouth feel)
or Half and half
or Light Cream

Almond milk
Hazelnut milk
Soy milk

Or a mix of any of them.

I bet heavy cream combined with either hazelnut milk or almond milk would be very tasty.

Sweetened condensed milk should give the sweetness and texture. Then add Imitation Coconut Extract

yup - if you mean the sweetened style coconut then sweetened condensed milk would be a good sub.

Depends on the purpose, but sometimes mother's milk is the best thing you can get.

almond or rice milk, though I think the former would be better...it has a wonderful flavour to it
