1 Folk, chopped fine
1 pot boiling water, large
Sugar, salt, etc to taste.
Gelatin -- fifteen pounds.

Bring pot to boil and add folk. Stir untill all parts are soft (vries with the folk). Add spices, sugar, gelatin and reduce heat to a simmer. stirring gently until consistency is completely uniform. Remove from heat and allow to gel. Use to flavor soups, or spread on crackers or toast.

but you forgot to add "strain" to the instructions...

no use serving lark's tongue in aspic if there are lumps
of cartiledge in there...

Why add gelatine?
A good folk jam should gel by itself.

Unlike the one in the Boars Head garden at Middlewich fest which had 2 groups in different corners ignoring each other

Like any listing sites - it relies on people keeping the info uptodate.

THEY DON'T.

I pro-actively try to update my info. Even with e-mails and personal contact at Festivals it is a logistic nightmare.

When new - they all over you to list. When going well they can't understand why you want to know if it is still current. When it has to fold they have no motivation to tell anyone anything.

But then some people understand. And they are rewarded with a better listing.
