14 Feb 12 - 06:15 PM (#3308604) Subject: BS: pancake schemozzle - help From: GUEST,leeneia So the pastor announces that on Shrove Tuesday we are having a pancake supper (prob. for about 12 people), and the pastor's partner, who is undergoing chemo, asks for help with the supper. So of course I say yes. THEN they tell me that somebody else has first dibs on the kitchen. How are we supposed to mix, cook and clean up pancakes with no kitchen? I proposed bringing a pot of chicken gumbo instead, but of course we can't do that. That would be too logical. My question is, has anybody ever made some kind of casserole or layered dish that involves pancakes? What goes in there to keep them nice? |

I have an electric griddle... wanta borrow it? ;>) One could make the batter at home and bring it ready mixed... but cleanup? ...*shrug* (Get some frozen waffles & use a toaster oven.... tell 'em it's pancakes with a non-skid tread.) |

14 Feb 12 - 06:47 PM (#3308616) Subject: RE: BS: pancake schemozzle From: gnomad Yes, a layered dish made with pancakes works OK. I'm assuming here you mean the crepe type of pancake, rather than the thicker type favoured by the Scots and, I believe, the Americans. I don't know how I would use those. You can build a dish very similar to lasagne, simply substituting pancakes for the pasta. You can also roll the pancakes around a filling (rather similar to rigatoni) cover in a second, different, sauce and then bake. Cheese with spinach makes a good filling, likewise shredded chicken with almonds or cashews, lentils with mushroom works well, just let your imagination have a day out. One advantage of rolling rather than layering is ease of serving, but similar fillings work for either method. I tend to top off with a little grated cheese and breadcrumbs, it just adds a bit of texture. I suppose you could do something similar in the sweet line if you wished. I quite fancy the idea of blackcurrants done that way, topped with ice-cream, custard, or cream according to taste. Must try it some time. |

14 Feb 12 - 06:48 PM (#3308617) Subject: RE: BS: pancake schemozzle From: YorkshireYankee Perhaps you could make the pancakes at home; put sheets of waxed paper between them so they don't all get stuck together? Not sure how you'd keep 'em warm, though... If you don't get access to the kitchen to clean up, you may want to bring large containers of water, dishrags & dishtowels, a basin or two, dishwashing soap, plenty of bin bags, and serve up on disposable plates with disposable cutlery... That's a mighty tall order, though! Is this the first time this thing has been done without access to the kitchen? If not, perhaps you could ask the pastor's partner (or the pastor, or someone who was involved last year) how they handled it. Sounds like additional help would be appropriate, considering... Are you responsible for providing hot drinks as well? |

14 Feb 12 - 06:57 PM (#3308618) Subject: RE: BS: pancake schemozzle From: Melissa can't you make them at home and schlep them in an electric roaster? I don't know about pancakes, but it would work for latkes. If you kept them warm in the oven before loading the roaster, I think they'd be less gummy. |

14 Feb 12 - 07:08 PM (#3308627) Subject: RE: BS: pancake schemozzle From: Jeri I once had a magnificent lasagne made with crepes instead of pasta. The chef also made his own turkey sausage for it. There are probably ingredients that would taste more pancake-y. Then again, I think Melissa's right. Frozen pancakes taste pretty good, so if you made your own pancakes at home and just kept them hot or re-heated them, they'd probably be fine. |

14 Feb 12 - 08:15 PM (#3308654) Subject: RE: BS: pancake schemozzle From: gnu I'd tell the pastor that the kitchen is unavailable so he'll have to figure something else out. I am sure God would understand. |

14 Feb 12 - 09:49 PM (#3308682) Subject: RE: BS: pancake schemozzle From: EBarnacle I like the idea of a layered dish. If you have one near by, an oriental market has egg roll skins or rice pancakes and you can tell everyone that you made something exotic for them. |

15 Feb 12 - 01:21 PM (#3309007) Subject: RE: BS: pancake schemozzle From: GUEST,leeneia A lot of excellent ideas here. I like Spaw's approach: go to New Orleans. BWL's idea of converting would solve the pancake problem, but the question becomes, would the new faith let me play recorder at services? These people not only let me play, they actually seem to like it. "Sorry" to all the folks who suggest crepes, lefsa, enchilada or other substitutes. This lady has her heart set on pancakes and nothing else. We shall see how this all shakes out. Meanwhile, I would be very glad to hear from anybody who has ever cooked pancakes and transported them. |

15 Feb 12 - 02:01 PM (#3309031) Subject: RE: BS: pancake schemozzle From: Charmion You could mix the batter at home and bring it to the church hall with a skillet and a hot plate or Coleman stove. Somebody else could bring the syrup and butter. Just don't invite the fire marshal. But I believe that gnu has the answer: the pastor should acknowledge that staging a pancake supper without using the kitchen is a lot to ask of parishioners who aren't Army cooks. |

15 Feb 12 - 02:18 PM (#3309038) Subject: RE: BS: pancake schemozzle From: Maryrrf I rarely make pancakes - they're not my favorite breakfast, but when I do I usually save some for reheating later or freezing. I find that they reheat well. I think you could definitely get away with making the pancakes at home and transporting them to the church. What I would do is make them and wrap them in batches in sheets of aluminum foil. I'd put these aluminum foil packets of pancakes in the oven to keep them hot and then when ready to transport put them in a large baking dish, insulate well and take them to the church. If it's an option, pancakes heat up pretty well in a toaster and if you have access to a couple of toasters you could probably not even worry about keeping them hot on the way. If there are no cleanup facilities because somebody else is using the kitchen - just use paper plates and plastic utensils (not very green, but you do what you have too...) Provide butter and syrup at the table. |

15 Feb 12 - 03:32 PM (#3309073) Subject: RE: BS: pancake schemozzle From: GUEST,mg I would just do as someone else suggested and make the batter at home, have a couple of electric skillets to fry them, use paper plates or bring dishes from home if you have enough, or split that chore with someone else, bring them home and run through dishwasher..or just bring a pancake mix and mix there and bring mixing bowls etc. home and wash...if it were for 200 people I would say no but for 12 should work...you could also have cut up fruit, bacon done on a George Foreman grill etc. mg |
