As some of you know, when I go to a festival, visit folks, or want to get in good with a mechanic, I bake something; usually a quickbread or chocolate cake, to show I appreciate somebody's work and just keep their blood sugar up through a long day. Trouble is, some of my dear friends are now diabetic, and I need something that won't kill 'em. Artificial sweeteners are out, as some of them give folks a splitting headache. Savory would be nice, but high salt content is not a good idea either. I usually make the treats and then travel, say 500 miles to deliver the goods. Any suggestions would be appreciated.

flour is the killer. Cheesecake with stevia and nut crust would be good for some. mg

Most diabetics I know budget for some sugar calories on travel or party days, ahead of time, and simply trade it off for fresh fruit they would normally consume. Let people cut their own portion size and serve with some fresh fruit as an alternative-- and then don't sweat it.

If you make the flour whole wheat as much as possible and still get good texture... and leave out more than half of the sugar but set out "add your own" honey or other sweeteners... you will be doing them the favor of letting them manage their own disease which they do really and truly do (I am married to a diabetic and we have many friends and parishioners managing sugars as well).

What they need is INFO about what is IN the food, and then from there they can manage their own portion size in light of what else they ate that day or plan to eat later.

(People who need to REALLY worry will also tend to carry their own insulin to correct whatever errors they commit.)

Here are the foods that turn into to high sugar counts in minutes

rice bread potato

whole foods that are not pure starch are the key

Don't think that vegetarian recipes alone are the answer.
Eggplant parm is good but so is chicken parm

If you are taking food simply as a thank you, how about taking a plant or flowers or something else instead? I am diabetic and to be honest with you, sometimes when people bring me sweets, I give them away or throw them away. It's not meant to hurt any feelings but rather meant to keep my blood sugar under some kind of control. I absolutely LOVE when someone sends or brings a handwritten note...sometimes it's a poem, sometimes it's a word of friendship....it's the thought behind it that matters.

I take insulin 5 times a day so while I CAN use extra insulin to cover a multitude of sins, I'd really rather not stick myself yet again.

It's very thoughtful of you to think about your friends with diabetes!

As Lily says its up to the person and the caring thoughts.

The most insidious thing I can think of is the person who does not know they are diabetic.

There are new sugars being looked at by the nih as we speak.

My favorite is xylocaine. it really does protect your teeth.

One possibility is to line a 9-13 inch baking pan with a layer of lady fingers. Spoon on fresh fruit. I like berries because they don't change color the way fruit slices would. I usually bring along a sugar-free topping like Cool Whip which people can add if they want--which they wouldn't if artificial sweeteners is a problem for them.

I've just bought a recipe book compiled by Diabetes UK, which has a number of possible recipes in it. e.g. Spiced Mandarin Gateau, Apricot Choux Ring, Victoria Sandwich ( a base for other things, perhaps), Spiced Apple Pie in Filo Pastry, Pinolata, Tiramisu, a variety of cheesecakes, Apple Pie in Walnut Pastry. If interested, I'll post whichever you like.
