the trad music forum on Yahoo has posed this question.
the DT come up with 4 or 5 but only one that relates to the edible kind (as opp to nuclear varieties).

Engleburt Humperdink (classical composer) wrote a lovely song for Hansel and Gretl based on a folk tune. I often sing it at clubs - English translation:-

A YouTube search for "morel song" will give you several relevant results.

I have discovered the Chanterelle Song from Paper Mario 64 and an unspeakable vocaloided J-pop song with a refrain about shiitake (google for them). I am not sure either would go down that well in a folk club or session.

There is a truffle growers association in Lorraine whose president, Alain Lieger, is also the director of a choral society. If anybody knows about French truffle songs he will.

"Man in the Woods" is a German. folk song. It was QUOTED by Mr. Humperdink, a German composer, in the opening scene of Act Two Hansel and Gretle (1893).

In a British 1955 songbook for elementary (6 year old) the illustration is of a plant commonly known as a Jack in the Pulpit. I do NOT believe it is about mushrooms.
