Cut meat into strips no thicker than 1/4 inch. Soak them in a brining solution overnight. Hang them on racks made of poles in the sun until they become shingles. A smoky fire under the strips will help keep the bugs away. Get some help if you're using a buffalo jump.

Dave H is based in Yorkshire like me, Rap. We don't get sun there :-)

Put it under a sun lamp. It may not be much good but it's better than using fake tan.

I stopped eating jerky when someone told me "You are what you eat!"

Bee-Dub, that's why I don't eat vegetables.

Years ago, my husband made many batches of beef jerky in the oven. He ate it at lunch regularly. I remember that it had a salty, flavorful marinade (soy sauce, Worcestershire sauce?) and it dried in a low oven for a long time.

I don't have his recipe any more, Dave, but if you Google "how to make beef jerky in the oven", you will find many recipes. His method has the advantages of no flies and no varmints.

Thanks everyone, I'll give it a go eventually.

When Lady Hillary makes yogurt, she turns the oven light on. That provides enough warmth to slowly develop the yogurt with no need for high heat. I suspect that's the drying method he used for jerky.

We also make lox by brining salmon in a salty mixture with sugar and artificial smoke for a day or so. We learned this from Dick and Susan.

The same method also works with electronics that have gotten damp in rain or other fresh water. If it's salt water just buy new gear as there will be all sorts of new ways for the circuits to blow themselves up.
