Recipe songs

Subject: Lyr Add: SALLY'S QUICHE (Linda Allen)^^
From: Croney

Hi,Folks -
I've been collecting recipe songs for some years now --would love to expand the collection. One great example: Orange Coffee Cake by Peter and Lou Berryman. My favorite so far! Here's one of mine -

SALLY'S QUICHE
©1984, Linda Allen

I first tried Sally's recipe a few years ago
When my baby was newborn, I felt kind of low
Sally came with a smile, and a salad and quiche
I wonder if she ever knew what joy that brought me
Two cups of milk and two cups grated cheese
Four pats of butter, a half cup Krusteaz
Four eggs and some spinach, spices to please
Bake 45 minutes, 350 degrees
Sally brought me the recipe, said it had served her well
In raising her children for years by herself
It didn't take long, and that's important, she said
When your children are crying and need to be fed

Chorus

And Sally brought wisdom and comfort and care
And the recipe brings back the friendship we share
It's an age-old tradition our foremothers knew
In grateful remembrance, I pass it to you

Chorus

This song/recipe appears on my CD, October Roses. It was inspired by my friend, Sally Kintner, when she brought over a beautiful quiche, a bottle of wine, and a loaf of bread in a basket and gave it to me shortly after the birth of my daughter, Kristin. We became good friends after that wonderful act of kindness, and I presented this song to her as a 40th birthday present.

Won't you bring back, won't you bring back
MRS. MURPHY'S CHOWDER
It was tuneful, every spoonful
Made you yodel louder.
After dinner Uncle Ben
used to fill his fountain pen
with a drop of Mrs Murphy's Chowder.

that's the chorus. the verses list all manner of things in rapid succession.

Hi, Linda - you'll note I added links to your recording, and to songs from our database that Callie and KT mentioned. The database doesn't have a @recipe category, but if you search for @food (or click here), I'm sure you'll find some recipes - although I wouldn't recommend serving the results of some of the recipes.

Hi, Linda- It's so cool to have you here! I have to tell you that Sally's Recipe has been a staple at my house since my kids were small. And when I bring it to parties, everyone wants to know the recipe- so of course I sing it! Thanks for enriching my life.

Garrison Keiller does a version of -- I think it's "White Choral Bells" that is a recipe for chicken soup. It's probably in one of the Prairie Home Companion Songbooks, and I think Faith Petric had a singing version of the recipe for pea soup, the soup that was always available in her kitchen on folk club nights. I could check if you'd like.
Good to see you here, Linda. We've talked at Rainy Camp.
Blessings,
Barbara

Subject: Lyr Add: B-O-R-S-C-H-T^^
From: Jim Dixon

B-O-R-S-C-H-T
(Peter Ostroushko, published 1986)

B-O-R-S-C-H-T
Is the sweetest thing this side of heaven Mama made for me.
I've eaten it all my life, or at least since I was three,
This B-O-R-S-C-H-T.

B-O-R-S-C-H-T,
And now that I'm an adult I can make it just for me,
And if you've got a minute I will share my recipe
For B-O-R-S-C-H-T.

First you take four quarts of water, put it in a pot,
You start a blaze beneath, add some salt but not a lot,
Add some pepper and some parsley, and a bay leaf don't you know,
When the water starts to boil, now you know you're on the go.

Then get a chicken (though my mama says that turkey tastes the best),
You chop it into pieces, take the giblets and the neck,
You add it to the water and you turn the heat down low,
And let that chicken simmer for a half an hour or so.

When your chicken meat is cooked, take it out with extra care,
You put it in a bowl inside your cold re-Frigidaire.
When your meat is slowly cooling, take a break and have a smoke,
While the soup pot slowly simmers you can watch your favorite soap.

Now it's time to get an onion, and four garlic cloves.
You chop them finely then into the frying pan they go.
Sauté them in some butter till they're brown and kinda clear.
You add them to the soup and now tomato time is here!

Now if you grow your own tomatoes, one quart is all you need,
If you use the store-bought kind, get two cans of Del Montee's.
Add the 'maters to the soup and let it simmer if you will,
Then add about a tablespoon of dried or fresh-cut dill.

Now get a half a dozen carrots, potatoes five or six,
Three or four red beets and chop them into bite-size bits.
Add the veggies to the soup and let it simmer there and thicken.
Go back to the re-Frigidaire and get that cooled-off chicken.

Take the meat off of the bones, take away the skin and fat.
Put the meat into the soup, give the rest to your old cat.
Now the soup is nearly finished and your race is almost run,
But don't forget the cabbage, that's the last thing that is done.

One small head of cabbage that you shred up fairly fine,
And once you put it in the soup it doesn't take much time.
You can start to set your table and call your dinner guests,
But don't forget the condiments that'll put them to the test!

First you get some rye bread that's full of caraway seeds,
You slice it nice and thick; use lots of butter, if you please!
Then next comes thick white sour cream that'll make you groan with pleasure,
You plop it in the soup and now you're really under pressure

'Cause the final step is garlic cloves that are thick and fat,
You peel them 'till they're naked and you eat them just like that!
You dip them in a bowl of salt and eat those puppies raw,
And now you're ready for the finest meal you ever saw ...

And Nirvana is at hand,
It's the best soup in the land,
And I'll spell it for you one more time so you will understand:

B-O-R-S-C-H-T
Is the sweetest thing this side of heaven Mama made for me,
For breakfast, lunch or dinner, any day of any week,
It's B-O-R-S-C-H-T.

B-O-R-S-C-H-T,
It makes you healthy, wealthy, wise; unless I sound too meek,
It's made me what I am and I'll continually speak
For B-O-R-S-C-H-T.

Bee ohh arr ess SEEEEE AIIIITCH TEEEEEEEEEE!

Tomatoes, cucumbers, watercress, celery
Tomatoes, cucumbers, watercress, spinach leaves
Now toss

Poppy seeds, ginger, mustard and sesame
Curry, cumin and thyme
Add vinegar, oil, and the salad tastes just fine

Bouillabaisse

Refrain: Ah, que c'est bon la bouillabaisse, ah mon dieu que c'est bon bon bon;

(Refrain)

My parents had this by Fernandel, from the 40's I think.

May I counter a query with a query? Years ago I attended a concert of early music -- it was late medieval/early Renaissance stuff. They (who? I can't remember now) did an Italian song of the late 15th century that translated as "I make my own lasagne." Honest! As I recall, it talked about the process and the ingredients. I know this sounds nuts; but as someone with an interest in food history I've always wanted to track that song down. Any leads? Thanks! Margaret

Here's a related one I put in a thread about 3 years ago. Not quite a full recipe, but a number of cooking instructions.

There was an old woman she kept fat hogs
She made plum puddings they poisoned the dogs
They were black, white yellow and green
Black white yellow and green
The rarest plum puddings you ever have seen
They were black, white, yellow and green.

She took them and dropped them into a pot
And she boiled them until they were blazing hot
They were black....

She baked them until they were blazing red,
One was like leather, the other like lead
They were...

She took up a pin and pricked the skin
The gravy ran out and the maggots ran in
They were....

She took them and put them down on the floor
They each in turn ran out of the door
They were...

She took them and put them up on a shelf
If you want any more you can help yourself
They were....

The Israeli song "Finjan" contains a recipe for coffee. The Digitrad has only the first stanza, which only gets as far as building up the campfire. I have all four stanzas in Hebrew, but it would be a long job for me to transcribe them, and besides the version is corrupted. Astonishingly, Google does not afford them. However, the operative lines seem to be: Kafeh vesukhar lo yutan, Umayim makhatsit hakankan. Yirtakh pa'amayim, Yosifu [= nosif od?] k'tsat mayim.... Coffee and sugar added to it, And water half the pitcher. Let it boil twice, Add some more water.

Paul Kelly: How To Make Gravy

Hello Dan, it's Joe here, I hope you're keeping well
It's the 21st of December, and now they're ringing the last bells
If I get good behaviour, I'll be out of here by July
Won't you kiss my kids on Christmas Day, please don't let 'em cry for me
I guess the brothers are driving down from Queensland and Stella's flying in from the coast
They say it's gonna be a hundred degrees, even more maybe, but that won't stop the roast
Who's gonna make the gravy now? I bet it won't taste the same
Just add flour, salt, a little red wine and don't forget a dollop of tomato sauce for sweetness and that extra tang
And give my love to Angus and to Frank and Dolly,
Tell 'em all I'm sorry I screwed up this time
And look after Rita, I'll be thinking of her early Christmas morning
When I'm standing in line

I hear Mary's got a new boyfriend, I hope he can hold his own
Do you remember the last one? What was his name again?
(Just a little too much cologne)
And Roger, you know I'm even gonna miss Roger
'Cause there's sure as hell no one in here I want to fight
Oh praise the Baby Jesus, have a Merry Christmas,
I'm really gonna miss it, all the treasure and the trash
And later in the evening, I can just imagine,
You'll put on Junior Murvin and push the tables back
And you'll dance with Rita, I know you really like her,
Just don't hold her too close, oh brother please don't stab me in the back
I didn't mean to say that, it's just my mind it plays up,
Multiplies each matter, turns imagination into fact
You know I love her badly, she's the one to save me,
I'm gonna make some gravy, I'm gonna taste the fat
Tell her that I'm sorry, yeah I love her badly, tell 'em all I'm sorry,
And kiss the sleepy children for me
You know one of these days, I'll be making gravy,
I'll be making plenty, I'm gonna pay 'em all back.

This thread brought to mind a song from a children's book I had way back. Written by Norwegian Thorbjørn Egner. The version shown here is in Danish, as this is the version I know.

Når en peberkagebager
[when a pepper cake baker]
bager peberbagekager
[bakes pepper cakes]
ta'r han først en mægtig gryde
[he takes a huge pot]
og et kilo smør omtrent.
[and approximately one kilo of butter]
Og hvis gryden ikke vælter
[and if the pot doesn't topple]
blandes smørret, når det smelter,
[he'll add to the butter while it's melting]
med et kilo puddersukker
[one kilo of sticky brown sugar]
til det lugter brunt og brændt.
[till it's smelling brown and burnt]

Og i smør og sukker kommer
[then he'll add to the butter and sugar]
man en halv snes æggeblommer
[half a score egg yolks]
som man rører ud i gryden
[mix it with what's in the bowl]
med et kilo hvedemel.
[together with a kilo of flour]
Når det værste er af vejen
[when the mixture is about done]
krydres peberkagedejen
[he'll add to the dough]
med en teske ægte peber
[a teaspoon of pepper]
og et lille drys kanel.
[and a sprinkling of cinnamon]

I found this Norwegian version:

Når en pepperkakebaker
baker pepperbakekaker
tar han først en stekegryte
og en kilo margarin
Oppi gryta smelter smøret
og det neste han må gjøre
er å røre sammen smøret
med en kilo med farin.

Og mens smør og sukker skummer
tar man åtte eggeplommer
som man rører ut i gryta
med en kilo hvetemjøl.
Og til slutt i gryta
slipper man en liten teskje pepper
også rører man omkring og tømmer
deigen på en fjøl.

I take it, this is the original version.

Best wishes,

Bente

BROKEN HEARTED LOVERS' STEW
by Benny Hill

And there's a heartache and a memory and just a tear or two
In a broken-hearted lovers' stew

There are nine carrots to remind me of the ring I bought for you
Some mint for all the crazy things that we 'mint' to do
A lettuce, 'cause your Mum and Dad would not 'lettuce' alone
I won't put in the truffles, you've got truffles of your own

An artichoke for the hearty jokes your father used to tell
And as he was a Welshman we'll have a leek as well
And your cousin, the religious one, so sanctimonious
For him some loafs and fishes 'cause that's all he ever does

And there's a heartache and a memory and just a tear or two
In a broken-hearted lovers' stew

There's a radish 'cause you kept repeating that your love was true
A beetroot for the time I said that I'd "bee-troot"-to you
Some shallots for the time I said I love you such "shallot"
Some capers to remind me of what up to which we got

A turnip for the way you always used to "turnip" late
A melon for the "melon"-choly way I used to wait
A chilli for how I felt as I waited for you
And a marrow to remind me of what I was frozen to

And there's a heartache and a memory and just a tear or two
In a broken-hearted lovers' stew

There's a swede to remind me of the man you left for me
An egg because you used to egg me on incessantly
And your little baby brother, what a messy little kid
For him some wine and water, 'cause that's all he ever did

Oh, I was fond of olives and you liked herbs I know
I gave up seeing "Olive" but "Herb" didn't want to go
So for the man who won you, there is one thing I must do
Put in some sage and onions 'cause he wants stuffing too

And there's a heartache and a memory and just a tear or two
In a broken-hearted lovers' stew
(tongue in cheek of course!)

Eggs, eggs and marrow bones will make your old man blind,
But if you want for to do him in, creep up from behind!

We should probably include "Four and Twenty Black Birds Baked into a Pie" but be careful that you add no more than a pocketful of rye.

Thanks to Frank Maher for posting AN IRISH STEW (and there's another copy where he calls it HOW TO MAKE AN IRISH STEW).

Take half a pound of reason and quarter pound of sense,
A small sprig of thyme, and so much impudence.
Mix them all together, and you can plainly see
He's a false deceiving lover. Let him go, farewell he!

An improvement on snips & snails & puppy dogs' tails, anyway.
