There are plenty of bars in Manchester that have live sessions: Peveril of the Peak in central Manchester Wednesdays has a play around - good musicians Ducie, off Lloyd Street, Chorlton on Medlock, Saturdays fiddler Danny plays and Wednesday there is a traditional folk song night mainly unaccompanied English.
