The SPAM thread reminded me that there are many in Mudcat who don't appreciate the multicultural aspects of SPAM--Here from Hawaii, are a recipe for SPAM FRIED RICE and SPAM SUSHI- courtesy of Aloha Joe.

SPAM FRIED RICE
4 cups leftover rice
1 1/2 cup SPAM, diced
1 egg
1 TBS. Shoyu (soy sauce)
3 stalks green onion, chopped

Fry SPAM in a small quantity of oil in skillet.
Lower heat and add rice.
Mix egg and soysauce and add to skillet.
Stir everything around just like they do in Chinese restaurants.
Just before serving add green onions.

Lea's Halau Style - SPAM MUSUBI

3 1/2 cup uncooked rice - steamed
1 can Spam cut into 10 slices
1/3/ cup sugar
1/3 cup shoyu (soy sauce)
1 tsp. rice vinegar
5 sheets sushi nori (seaweed)
Furikake Nori
<> Use either bamboo sushi mat or musubi mold
(small mold, cut nori in half - large mold, use whole nori sheet)
<> Fry Spam until light brown and remove from pan.
Heat sugar, shoyu and rice vinegar until sugar is dissolved then return Spam to pan, cooking for 1 minute.
<> Using Musubi mold:
Place nori on flat surface and center mold on top of nori
Place rice in mold and press down (rice should be 1/2" thick)
Sprinkle Furikake Nori over rice
Place seasoned Spam on rice
Add another 1/2" of rice on top of Spam and press down
Lift mold off then wrap nori around the rice
Turn musubi over placing on fold allowing the nori to seal
Slice & Enjoy!

When I was at school SPAM FRITTERS were a special treat,
Much better than the average school dinner - very simple to make

1)Slice spam thickly
2)Coat in batter
3)Deep fry in oil
4)Serve hot

Once I returned from a tour of duty overseas, I swore I would never eat Spam again. I've been true to my word for 32 years and don't have any plans on breaking it know.

About 30 years ago a firend brought some of his home-made wine to a party at our house. It was almost undrinkable, but we later used it to make some delicious Spam au vin.

Here's a glaze that's great on roast pork or ham, and also terrific on SPAM! --

1/2 cup frozen orange juice concentrate 1/2 cup brown sugar 1 teaspoon (or a bit more) powdered ginger 1/4 teaspoon (or a bit more) ground cloves
