You could contact Capriole music in Leominster, Herefordshire. I know the man that runs it deals in and plays renaissance instruments. Give directory enq a ring

Or you could try Diabolus in Musica.

They play and make their own early instruments. They don't currently list a pardessus, but I'm sure Paul would know something about them. He is in Kingswinford in the West Midlands.

The pardessus is the "piccolo" of the viola da gamba family, known in english as the viol. With the revival of early music there is a lot of viol consort music available and many excellent musicians playing them. If you want to follow it up, work from viol or viola da gamba on any search engine.
