There's an article in the online Guardian about a guy named Craig Vear - he plays drums in the band Cousteau (never heard it, so I don't know what kind of music it is) and he's traveling around the Antarctic collecting sounds - click here to listen to elephant seals, penguins, and another clip which is described as "music/docu-collage" -

I think it's nifty, what about you all?

Penguins sound remarkably like chickens. Seals sound like seals. Odd.

They sound like chickens. Very much so. I have it on good authority, however, that the flesh is oily and very fishy tasting.

Here's another guy recording the world around him and using it in musical compositions among other things.

Bernie Krause, at one time a member of the Weavers, now records the natural world, including vanishing soundscapes. His website is here. I especially like the sound of the walrus, found in the Sound Safari section of Bernie's site.
