He's started eating real people food, we've an abundance of fruits and veggies, and want to make zuchini bread. I have a thing which says we can substitute an egg with: 1 tsp baking powder + 1 tbsp liquid(it odesn't say WHAT liquid) + 1 tbsp vinegar OR, 1 tsp yeast dissolved in 1/4 cup of warm water OR, 1.5 tsp. water + 1.5 tbsp. oil + 1 tsp baking powder OR, 1 packet gelatin + 2 tbsp warm water (don't mix until ready to use.) BUT, knowing how many good cooks we have on here, I thought I'd ask if any of you have good eggless recipes for fruit breads, etc. Thanks a bunch, kat |

10 Sep 04 - 07:54 PM (#1268906) Subject: RE: BS: Need Eggless zuchini bread recipe From: Peace Chocolate Zucchini Cake 2 c. flour 1/2 tsp. nutmeg 1/2 tsp. salt 1 tsp. baking powder 1 tsp. baking soda 1 tsp. cinnamon 1/4 c. cocoa 2 c. sugar 3 eggs 1/2 c. oil 3/4 c. buttermilk 2 c. shredded, unpeeled zucchini 1 c. chopped nuts 1 tsp. vanilla 1 tsp. grated orange peel Stir together flour, baking powder, baking soda, spices, salt and cocoa; set aside. In large mixing bowl, beat eggs until very light. Gradually beat in sugar until mixture is fluffy and is a pale ivory color. Slowly beat in oil. Stir into flour mixture one-third at a time. Alternate with buttermilk and zucchini. Blend lightly, but thoroughly. Stir in nuts, vanilla and orange peel. Turn into greased 9-by-13-inch pan. Bake 45-50 minutes at 350 degrees. Cook's notes: To make buttermilk, combine 3/4 cup plain milk and 1/4-1/2 teaspoon vinegar. |

Suggest experimenting with eggless zucch pancakes and when THAT works, fill a bread pan with it. If the pancakes bomb, they can always become dumplings! :~) ~S~ |

The rest of it is fluff & flavouring. Eggs don't affect rising. Don't affect anything, just make for a moister dough. There are 10,001 recipes for bread. Most of them don't involve an egg, so just leave it out. It won't affect the end result (it'll still be better than anything you'll buy commercially, trust me). |
