While in Milwaukee I faced an angry mob one night when I announced the menu for an upcoming league party, and did not include RAW GROUND BEEF, with buns and onions. (It was a pistol league and they were armed.) They call them Cannibalburgers. Very popular, with beer and brandy boilermakers. The burgers ain't too bad, if you've had enough boilermakers. John |

Boilermakers aren't too common in Milwaukee, either - usually, it's "a beer and a bump" - but it IS a Boilermaker if you float your shotglass of brandy in the beer. The "bump" is usually brandy, but can be any kind of schnapps. When I lived in Wisconsin, I learned that Wisconsin consumed as much brandy as the rest of the United States combined. And a cannibal sandwich is usually served on pumpernickel, with lots of onions and black pepper - and beer on the side, with or without the "bump." It seems it turns the meat "permanently pink." The CO is used in such small amounts that it's apparently not a significant(?) hazard, and nobody seems to be questioning the "as shipped" safety, but preventing the meat from exhibing the color changes normally associated with spoilage means you're probably unable to detect spoilage if it does occur.
