According to the web site a much higher percentage will ripen in about a week then if un oiled. "green" fig pickles and compote are made with RIPE green figs; not unripe fruit. |

You can have them hot with ice cream or put them in jar in the refrigerator and use them as a relish with parma ham and peaches. Fabulous. |

16 Nov 06 - 02:42 PM (#1886466) Subject: RE: What to do with under ripe figs From: IWTATBM Take: 1lb of unripe figs (or as many can be harvested) 2 tablespoons of cider vinegar 5 heaped tablespoons of golden syrup 1 1/2 pints of water Boil this slowly for approx 35 mins, adding more water to keep the mix from drying out. When the figs are soft and the water absorbed, serve with ice cream, sprinkled with cinnamon. I have never tried this recipe, having just created it, but would be interested to know how it turns out. |

Warm it (or treacle) in some hot water before use, and it's alot easier. Edinburgh hasn't had a frost yet, but is low lying and costal, so does tend to avoid them. |

When the frosts creep up on ours before they ripen we just accept that the season is over and that's that! Ripe figs are my FAVOURITE fruit of all time. We have the green skinned ones that are brilliant red inside (when ripe) and they taste rather like strawberry jam when you eat them raw! Yum! Robyn |

Apparently the sulfates in the paper have a ripening effect. Ripe ones are delicious with provolone and sopressate ham. I once had a fig tree in my yard and for two years had the pleasure of eating that day's ripe figs as described above. As I selected that day's crop, I would regularly hum: "And everyone, 'neath his vine and fig tree shall live in peace and not afraid." |
