Stilton is protected so when a farm near to where I used to live decided to make an unpasteurised version in their place in North Nottinghamshire, they came across the naming problem. They found that in Medieval days, Stilton was called Stichleton, so that's what they call their cheese, and bloody fine cheese it is.... Anyway, Cornish pasties are made in my village. By me.
