Otha Tuner and the Rising Star Fife and Drum Band from North Mississippi do "Granny Does Your Dog Bite?" on the "Everybody Hollerin' Goat" CD (Birdman Records). It's done with cane fife and snare and bass drum. I'm seeing/hearing that there is an underlying rhythmic/meter pattern common to most of the above cited songs/versions. Evidence for the fiddle tune transmission of these versions and variants.
