I picked it up from the sorting office, opening little bits of it while I was being driven into town to buy new bedding. Lots of individually wrapped pressies with messages on, home made blackberry jelly which we've just finished, a little tin of salmon paté, and all sorts of Christmas goodies. The photos and fridge magnet went straight up on my fridge so I am constantly reminded of the thoughtful presents and my lovely Santa! Sorry for the delay in this post, but I've only just got online in my new house. Thank you so much, Lyrical Lady- the thought and time you put into my present are priceless, and couldn't have come at a better time for me. |

Subject: Kendal Mint Cake recipe From: Helen Date: 13 Jan 04 - 02:30 AM I found a recipe in some pages I took from an Oz magazine back in 1980 for Kendal Mint Cake. I haven't made it myself, but it looks easy. This recipe is very similar except that instead of using a candy thermometer it gives the old fashioned instructions to "2. Bring to the boiling point until a little will form a soft ball when dropped into cold water". HELEN'S* BRITISH COOKING SITE [* no connection to me] Kendal Mint Cake Kendal Mint Cake http://www.hwatson.force9.co.uk/cookbook/recipes/confect/kendalmintcake.htm According to legend, a Kendal confectioner, intending to make glacier mints, took his eye off the cooking pan for a minute and then, resuming his task, noticed that the mixture had started to 'grain' and become cloudy, instead of clear. When poured out, the result was Mint Cake. Makes 16 squares Granulated sugar - 450g (1 lb) Milk - 150 ml (5 fl oz) Peppermint essence - 1 tsp METHOD 1. Butter an 18 cm (7 inch) square shallow baking tin. Place the sugar and milk in a saucepan. Bring very, very slowly to the boil over a very low heat, shaking and swirling the pan occasionally until the sugar is dissolved. 2. Place a thermometer in the pan and boil rapidly until the mixture reaches 140 ºC / 275 ºF. Remove from the heat and add the essence, beating well until smooth and cooled slightly. 3. Pour into the prepared tin and as it cools, mark out squares with a knife. Once cold cut into 16 squares. Charlie & Judy met John Dengate who drew the card on their first trip here when he was performing at a folk club they visited. This trip he was going to be away performing when they were in Sydney, however they ran into him when he was busking. Weren't there enough to chose from? The Kings Cross Hotel is one of my favourite buildings - I've been keeping an eye on it for years since they closed the upper floors & let it run down. As a cynic with almost 28 years experience living in the Cross I was waiting for a modern building to fill the site. But it hasn't happened, yet. The ground floor is a bar catering to backpackers - they show English TV shows (including Oz classics like Neighbours that pommy backpackers miss so severely), sell jugs of beer & have Miss Backpacker competitions! Leunig is a wonderful cartoonist - he invented the innocent bystander (all his characters are innocent) & I love his work. My favourite cartoon shows a father & son watching a beautiful sunset on TV, behind their backs the same sunset is outside their window. sandra |

I actually stayed at the King's Cross Hotel, walked Victoria Street, road the Manly ferry and best of all flew over Sydney Harbour in a single engine Cessna - I picked up the pilot on a flight to Brisbane.
