Another tip...if you want devilled/stuffed eggs, stir the eggs often before they come to a boil, or shake them in your hand first to center the yolks. I generally do both. I always put the eggs in cold water, add a bit of salt, boil for 12 minutes, (make sure none of them floats, that is a sure sign it is rotten) pour off the hot water, shake the pot up and down, and back and forth to crack them. Pour cold water on them, and peel. If you remove a piece of the shell with the underlying membrane, the rest will come off quite easily. |

Then I leave in cold water to cool for awhile before using or storing in the fridge until needed. I tendto boil quantities of eggs because the kids like them in sandwiches. I find that if they are not cracked soon after boiling not only are they more difficult to get out but they end up with a grey rim around the yoke which doesn't look nice. |
