Smoked pork picnic shoulder with cabbage, carrots, spuds and green and yellow beans. It is absolutely to die for.

Years ago, a buddy of mine would cook a stew... cabbage, carrots, spuds, onions, beets (with the geeens), corn on the cob, beans, broccoli... everything he could throw in it... and butter. No meat. Deeeelicious!

So, what's your boil up this harvest?

If I can get my hands on some fish heads, that'll be the 'meat' portion. Much like you, add stuff. It's a good way to handle new stuff and leftovers.

Fish head stew... haven't had that since I was a lad. Even then, it was a stew made in the spring only.

Put the fish heads in a crock and let them ferment with some shredded cabbage and garlic. Pull the fish heads out before serving this sauce, and if someone lives with you make it Elsewhere.

Ratatouille
Ingredients
1/4 cup olive oil, plus more as needed
1 1/2 cups small diced yellow onion
1 teaspoon minced garlic
2 cups medium diced eggplant, skin on
1/2 teaspoon fresh thyme leaves
1 cup diced green bell peppers
1 cup diced red bell peppers
1 cup diced zucchini squash
1 cup diced yellow squash
1 1/2 cups peeled, seeded and chopped tomatoes
1 tablespoon thinly sliced fresh basil leaves
1 tablespoon chopped fresh parsley leaves
Salt and freshly ground black pepper
Directions
Set a large 12-inch saute pan over medium heat and add the olive oil. Once hot, add the onions and garlic to the pan. Cook the onions, stirring occasionally, until they are wilted and lightly caramelized, about 5 to 7 minutes. Add the eggplant and thyme to the pan and continue to cook, stirring occasionally, until the eggplant is partially cooked, about 5 minutes. Add the green and red peppers, zucchini, and squash and continue to cook for an additional 5 minutes. Add the tomatoes, basil, parsley, and salt and pepper, to taste, and cook for a final 5 minutes. Stir well to blend and serve either hot or at room temperature.

Pip freezes that type of ratatouille mix. It's a way of using excess tomatoes, ciurgettes. etc. Reheats well and goes nicely with pasta.

And while on using up excess tomatoes. Ours haven't done well this year (late planting, neglect on my part, lack of sunshine when we wanted it...) but last year we had loads. Ketchup worked well. I don't know what recipe Pip used nut here's one

Back to a meal. Boiled (prefereably salad or new) potatoes with a bit of butter, green beans, a boiled or steamed mix of veg served in Yorkshire puddings and gravy.

Or maybe a vegetable crumble say this. Again, take the idea and use what you have got.

I generally make a simple stew, with the primary ingredients being "whatever." Potatoes, Carrots, Onion, Cabbage would be a likely start, with whatever meat is handy, if any. I seldom use much in the way of "added flavorings" but once, in a moment of irrational whimsy I added a touch of Tarragon.

Much to my surprise, several people liked it enough to ask what the "extra ingredient" was. More importantly, I rather liked it so I've used it fairly often since.

The problem is that Tarragon can be very strong and "the flavor grows" as it cooks in. Too much will make the whole pot NASTY. If you dampen the tip of a finger (I just lick it if nobody's looking) and press it down on top of a spoonful of the dried chopped commercial stuff, what sticks to the finger is sufficient for a 2 to 3 quart stewpot to get the desired "mysterious edge of flavor." If you try to measure with a spoon, you'll get licorice stew. I haven't found anyone who likes the latter.

I'd suggest trying it when you're making a small pot just to have something to put in your belly before adding it to a "culinary creation" you're proud of; but once you learn to judge its potency it adds a rather nice "edge" - as long as there isn't enough for anyone to tell what it is. It sets off the flavor especially nicely in stews with enough cabbage to have a significant "presence" in the pot.

Here is my recipe for veggie stew:

Clean and dice one medium sized vegetarian. Brown in bacon grease.

In a large stockpot add the meat and whatever vegetables you have on hand. Simmer for hours, seasoning as you see fit. A couple of bottles of nice wine are in order, and a decent table wine can be added to the stew.

Serve with chunks of crusty bread and good butter.

I just finished making the following Curry sauce by instruction from a cooking website.

Seens pretty good from taste test but the Granny Smith apple I used may have been too ripe. Sauce is too sweet. Use 1/2 an apple instead of a whole one.

This is supposed to be for an assortment of Summer Squash plus beans, eggplant, corn and even garbonzos.

For the mix mentioned above, I would skip the beets, potatoes and greens.

I think some Basil would help. Perhaps cook veggies separate and pour Curry sauce on afterwards.


Summer Vegetable Ragout with Exotic Curry Sauce

This vegetarian entre would also be delicious served with lamb or shrimp.

Curry Sauce

    * 3 tablespoons vegetable oil, divided
    * 1 small onion, chopped (about 1 cup)
    * 1 small carrot, peeled, chopped
    * 1 stalk lemongrass, coarsely chopped and pounded with meat mallet to flatten slightly
    * 1 1-inch piece unpeeled fresh ginger, thinly sliced
    * 1 small Granny Smith apple, peeled, finely chopped (about 1 cup)
    * 2 tablespoons curry powder (preferably Madras)
    * 2 1/2 tablespoons all purpose flour
    * 2 cups fresh carrot juice

Heat 1 tablespoon oil in large saucepan over medium heat.

Add onion, carrot, lemongrass, and ginger; saute until slightly softened but not brown, about 5 minutes.

Add apple and curry powder; saute until vegetables are tender, about 8 minutes.

Add remaining 2 tablespoons oil, then flour and stir 1 to 2 minutes.

Gradually pour in carrot juice; bring to boil, whisking constantly. Reduce heat to medium-low; simmer uncovered until sauce is slightly thickened and reduced to generous 2 1/2 cups, about 20 minutes.

Strain sauce through fine strainer set over bowl, pressing on solids to extract as much liquid as possible; discard solids in strainer.

Season to taste with salt and freshly ground pepper.

DO AHEAD Curry sauce can be made 1 day ahead. Cool slightly. Cover; chill. Rewarm before using.

One trick I like is to carefully chop all veggies into DIFFERENT sizes, not uniform, so they don't all cook the same and you have not only different tastes but different textures. Leave some huge chunks of garlic and onion and mince some and chop the rest normally, and so on.

I have a recipe which is called succotash, but after Googling, I have discovered that it is different to what is known as succotash in the U.S. I like the flavours and it's nice when I want something slightly different. It's interesting, too, that if I taste it before the flavours are integrated, it tastes a bit off-putting, but as soon as the flavours have worked in together it is yummy.

It has sautéed onions and garlic, with tinned tomatoes, red and green capsicum pieces, and corn kernels. Sometimes I add carrot chunks too, which I fry at the same time as the capsicum.

After cooking the onions and garlic until they are nicely translucent, I fry the capsicum pieces for a bit, then the tinned tomatoes (or fresh if they are available) and then the corn kernels. Cook it for at least 20 minutes, or until the flavours are right. Goes well with rice, etc. You can fry some chopped bacon pieces at the beginning, keep them aside, then fry the onions in the bacon fat if you aren't making a vegetarian version. Scatter the bacon bits on the top to serve.

It makes a good bring-and-share dish.


Another good, deceptively simple dish is Turkish green beans

There are lots of recipes around. Sometimes I sneak in about half a teaspoon of paprika, too, or some harissa paste. It's one of my favourite dishes with rice, and is a good accompaniment to kebabs or other meat or with vegetarian Turkish food - or with non-mediterranean food as well.

Forgot to add, when I make the Turkish Green Beans, I cook the tomato base up first and add the grean beans. I only cook the beans long enough to soften them without losing their colour.

Now I come to think of it, I think there are green beans in the succotash, too. I'll have to look the recipe up now.

Oops! Forgot the other ingredient for the "succotash" - chunks of pumpkin.

All right, forget the recipe from memory - here it is from the book!

4 slices bacon, chopped
1/2 cup chopped onion
1 clove garlic, finely chopped
1 green pepper, seeded and finely chopped
3 cups peeled, seeded pumpkin, cut in 3/4 inch cubes
1 can tomatoes
1 cup uncooked, sliced green beans
10 oz (about 1 1/2 cups) corn kernels - fresh, canned or frozen
salt, dash of pepper

Fry bacon until it is crisp, drain & reserve. Use 1/4 cup of drippings to fry onion, garlic, green pepper, and pumpkin. Cook, stirring occasionally for 5 minutes. Stir in tomatoes, beans, corn, salt & pepper. Cover & simmer until pumpkin is tender (about 25 mins). Serve topped with bacon. Makes 6 to 8 servings.

Which reminds me of an American woman I knew once who amazed me by saying that she had never cooked pumpkin pie using fresh pumpkin, until she came to Australia. She had only ever used canned pumpkin.

If you are using canned pumpkin, you would simmer the whole mess for 25 minutes, but put the pumpkin in about 5 minutes before the end, I guess, otherwise it would mush up too much.

Does canned pumpkin have sugar added? My Oz sensibilities cannot cope with that idea. Pumpkin is a staple vege in Australia. Famously used for making yummy pumpkin soup (onion, garlic, pumpkin, chicken stock), but even more well-known for the ubiquitous "Sunday roast", for which it is roasted in the oven until the outside is brown and almost caramelised, and the orange flesh is soft and flavoursome.

Canned pumpkin over here is cooked and pureed, but just pumpkin. Pureed, though, so it's mushy by definition. Good for that kind of soup, or else will make a thick base for the other vegies.

ROASTED VEGETABLE STEW

There are no real measurements for this recipe, and you can vary with other veggies that roast well, such as potatoes, beets and winter squash. The roasting process really brings out their flavors.

Cut onions, zucchini, fennel, and peppers into chunks. Add sliced sun-dried tomatoes.

Toss with olive oil to coat, salt, pepper, sliced garlic cloves, Italian herbs and a healthy splash of white wine.

Place in a covered casserole. Bake at 400 degrees (farenheit) for 45 minutes to one hour, until the veggies are very tender.

i always start a soup or stew with olive oil, onions and garlic. Some spices are bettor off fried or sauteed in oil before adding. Mushrooms, red pepper, and curry are best if sauteed before adding to
stuff. I learned this from making split pea soup/dahl .

When i think of stew i think of Mulligan or Irish Stew.
