Does anybody know alternative lyrics to this tune. I heard somebody the other night singing a version that involved trying to milk a bull, marrying a daughter off to a horse and various other strange ideas.

Well, that sounds frankly bizarre!  There's a normal set of the song on the DT:  The Nightingale  and quite a few versions on this thread:  One Morning in May...  but none involve anything out of the ordinary.  Milking the Bull turns up, as Jon says, in  Who's The Fool Now (Martin Said To His Man  of course, but as for the rest... do you think somebody just made it up, perhaps?
