This is a gorgeous dessert / pudding from Scotland. I know it is made up of raspberries, oatmeal, drambuie and cream but the hows and the how muches escape me. Can anyone help please?

Cranachan

Ingredients:
3 oz (half cup) pinhead or coarse oatmeal
Half pint double cream
1 tablespoon Drambuie (optional)

Method:
Toast the oatmeal in a frying pan on a high heat until lightly brown. Whisk the cream into a soft consistency and mix in the oatmeal and Drambuie (alternatively, use a few drops vanilla essence or other flavouring of your choice). Serve in tall glasses. A popular variation is to mix in 6oz (one and a half cups) of fresh raspberries. Or use vanilla ice cream instead of cream.

Stapog is much the same, except that you use a good Scots whiskey (I like Talisker) instead of Drambuie, and use a drop of lemon juice as well.

Raggytash makes amazing cranachan, I will ask him to put his version of the recipe on the thread - I don't know it as I'm famous for not entering the kitchen unless I really have to!

Drambuie or Whisky is NOT optional it is ESSENTIAL. I prefer to use a whisky/honey combination as I find Drambuie too sweet

1/2 pint whipped cream, whipped till it peaks, fold in 2 tablespoons plain yoghurt, honey and single malt whisky to taste (I use 2 tablespons of honey and a couple of measures of whisky)and also fold in roasted oats and this time, do NOT whisk.
This is then spooned into a brandy baskets half filled with fresh (if possible) Raspberries, finished with a grating of dark chocolate and a Raspberry, chill before serving.

Definite loosener of knicker elastic this one !

Raggy, would Glayva be a better substitute to Drambuie? it is much less sweet!!

Never tried it, so cannot make a judgement, however I am aware that wombat is rather fond of it, so it may work. However I first came across Cranachan when I was invited to dine in Glenturret Distillery ................I suppose they have a interest in using whisky
Glenturret, incidentally make a rather pleasant Whiskey liquer themselves but did not use it for the Cranachan so that may give you some indication

Incidentally, I missed something off my recipe, it is finished ot only with a raspberry, grated dark choclate but a little raspberry sauce drizzled over. You can make it with Strawberrys but I find they don't work as well, not tried anything else yet.
