So just to share the joy...got any pasta favorites?

Personally I'm fond of Conchiglie because it holds sauce so well.

But I'm a sucker for Angel Hair...my vote for the most sensuous of all pastas.

No one is mentioning on how well the Asians do pasta.

For example, the Chinese and use a wide rice noodle called chow foon or chow fun. Thai restaurants also use this wide rice noodle which is so creamy deliscious in a dish called pad se ewe.

MG, you're absolutely right! I gained a whole new appreciation for the art of pasta while living in Hawaii with it's Asian majority.

Here in England, the treat to end one's evening with is curry...in Hawaii, it's rice noodles.

You know - I heard that Marco Polo introduced pasta to the Chinese . . . or something like that.


By the way - ever notice when you break spaghetti in half, it actually breaks into three pieces? Richard Feynman the physicist tried to figure out a formula for that, but wasn't able to come up with anything in the time he spent on it.

I haven't found it in years, but there was an Italian variety called Marguerite or Margherite, like skinny lasagna noodles, about 1/4 inch wide, with wavy edges like lasagna, molto delicioso! but not commercially available anywhere anymore, as far as I know, and who has the time to make it fresh, ...I used to roll out and fill and cut the ravioli with my grandma, sigh! 'mangia, mangia, figlio'.... Margherite was my mothers favorite, tried hard to find some before she died last year, no luck.

Bill Kennedy, the kind of pasta you are talking of seems to be pappardelle , or tagliatelle. They are great with the meat sauce. But my favourites are spaghetti aglio olio e peperoncino, spaghetti with garlic, olive oil and very hot chili pepper.

Thanks, harpmaker - I'm glad you liked my pyrography work. It's great fun to do! And you can listen to music while you work.

But I guess ellenpoly raised a good point... I wasn't "advertising" as such, and really just forgot to remove a standard link from my automatic sig, but what is the rule here on Mudcat? Is it offensive to add such a link? Or is it useful & interesting, especially as I will donate some profit to Mudcat from any Mudcatter orders? (Although I guess you couldn't have known that from the site - maybe I should add a Mudcat link & note about that.) Or what?
I just don't know...

there is another stuffed pasta called margherite - which means daisy, and a larger version called sunflower, girasole, but these are the flat noodles shown in the photo with a wavy edge, why they are called daisies I don't know, except the petals in a daisy overlap each other, up and down, like the wave in the pasta, even though in this case it't not round

As for advertising, I there aren't any hard and fast rules around here. From the FAQ: We don't cater to chain letters or non-music advertising, and we expect people to use moderation when they advertise music-related things.

Most of us who have webpages that might be of some interest (especially if they are related either to music or at least to a thread in the BS section) share a blue clicky with everyone once in awhile.

when I was growing up - tortellini just was not commercially available - except for this one tiny mom and pop store a couple towns over where the Gramma occasionally sold a batch - (if she liked you - and she felt like it and if it wasn't the 2nd tuesday or a month with an "r" in it).

*MY* Nonni made fresh tortellini - heaven on earth! it took us YEARS to get her recipe out of her - and then of course there was the problem of getting the "right" ingredients. Do you know how hard it was to get mortedella in a small New England town 30 years ago? (or for that matter in rural NY *NOW*)

The fun part of course was stuffing them - we would have a contest to see who could enclose the most filling in the smallest wrapper. Also contests to see who could do the most in a minute.

my favorite is simple pasta either angelhair, spaghetti or even one of the wider noodles with a sauce of fresh tomatoes, basil, roasted garlic and olive oil lightly sauteed right before it is put over the pasta. A very simple common favrite in almost any resturant or sidewalk cafe in Italy , cheap and universally fantastic.

Uh, like, uh, what?

We have kids who eat those noodle packs that turn into something like soup when ya add water and heat, ya know? Like, cooked is very important, Blackcatter.

I like lots of pastas, from couscous to lasagna. Something I became partial to years ago is spaghetti cooked al dente with butter. Next, add fresh romano and a bit of salt and pepper. My ex was Italian, and I got used to really good food that wasn't the westernized stuff that people mistake for Italian food (don't mean to sound snobbish). There is some seriously good eatin' from that country.

Oh, man! I've just officially started my yearly diet! I knew there was a reason I was obsessing on Pasta lately...it's the first thing I have to strike off my menu for the next month!

I don't have time for the website, but I started it years ago as a whim - I had already collected the nucleus of the songs since I perform them on stage. I started with about 250 shows - I've tripled it now. It has grown very large, and I'd hate to close it down since it's actually a unique site. Besides with the minimal advertising, it not only pays for itself, but pays for all my webhosting needs, my Internet connection and my sushi addiction.

The Twisted Fish is only open during the summer months, catering to the cruiseship crowd. Yesterday we made our reservations for 4:00 P.M. and the place was blessedly sparsely populated. I go there at least once a season- and if someone from out of town visits, I often take them there. So far- four years- I always have the same dish!

Pasta has been made from chestnut flour, artichoke flour and soy flour that I know of. Other beans are sometimes used. I've seen recipes for gnocchi -like dumplings of acorn flour, also cattail starch, arrowroot starch, and manioc/tapioca.

I suspect most any starchy substance could be used - as long as the product will hold together.

if you admit to watching 'Iron Chef' they have several times made "noodles" of fish, or a mixture of fish and "sticky yams" - which reminds me I need to look that particular ingredient up...
