I've seen recipes for gnocchi -like dumplings of acorn flour, also cattail starch, arrowroot starch, and manioc/tapioca. I suspect most any starchy substance could be used - as long as the product will hold together. |

I like lots of pastas, from couscous to lasagna. Something I became partial to years ago is spaghetti cooked al dente with butter. Next, add fresh romano and a bit of salt and pepper. My ex was Italian, and I got used to really good food that wasn't the westernized stuff that people mistake for Italian food (don't mean to sound snobbish). There is some seriously good eatin' from that country. |

Do you know how hard it was to get mortedella in a small New England town 30 years ago? (or for that matter in rural NY *NOW*) The fun part of course was stuffing them - we would have a contest to see who could enclose the most filling in the smallest wrapper. Also contests to see who could do the most in a minute. |
