OK....goes like this. I am in a chili cookoff on Saturday. I have won 2 out of 3 I have entered, but I need a fresh recipe. C'mon Mudcatters, help me out. You can post recipes here or email them to micklane@charter.net. Don't let me down...............hey.....that sounds like a song......

I posted something about this before, and I don't really have a recipe for it, but...
Get some beef bones, cut as much non-bone stuff off as you can.
Cook the crap out of them for about 4 or 5 hours - low setting (maybe 250)
Boil the crap out of them another few hours, boil it down and strain the stock. Honest-to-goodness, this is what will make the chilli GREAT.

Brown trimmed stew beef in oil, and throw it in the stock with onions, green peppers, chopped tomatoes (I think the Italian plum tomatoes would be your best bet), chilli seasoning (I like to add extra garlic and chilli pepper). Cook the crap out of it.

I'm too disorganized to time anything, so I throw some more veggies in (tomatoes go last) when the previous ones turn to mush. The beef will get shredded, which I like. Adjust seasoning and add salt if you want, but you might find it's salty enough just from the tomatoes.

Mick, have you taken a look at the yards and yards of recipes that have been posted here already? Look for any BS thread started by Rick Fielding, for a starter, and you're bound to find food mentioned in it.

Substitute the following for their conterparts in your usual recipe:

Venison (fry it up in bacon grease)
Black Beans
Angela Mia stewed tomatoes
Sangria
Chipotles (smoked chilis)
Molasses
(Maybe a smoked ham hock or two)

Trust me. Judges will pin you blue, then die happy. Then YOU will owe ME a kiss. :~)

I remember grits, cornbread, macaroni & cheese, high calorie liquids and a couple of other things, but not a thread specifically for chilli. Just had a look, and as I expected, I was wrong: Chilli Thread. There's one recipe with unsweetened chocolate in it that sounds pretty interesting.

Mick, chili as in made with chilis or Con Carne as in mainly beef or a meat like substitute?

I like it with shaved beef and bell peppers that have been roasted then added to clice chilis and carmelized green peppers (with brown sugar) and onions.

A bit of Garlic, dry chili powder, scant salt and cumin, red wine.

Everything tastes like it self if you eat just the beef, you taste beef, if you eat a chili its hot, if you eat carmelized peppers they are very sweet. Eat some of each and they all join together in flavor. Chili doesn't have to be heartbreaking ly hot, if it is you have run out of ideas and you are sustituting heat for flavor.

I need to follow my own advice. I don't know why I didn't do a search, but sure as hell, there it is. Thanks for the advice and the link, folks. I have chosen a recipe from the other thread for the contest, I will attribute it, I will probably tinker with it a bit, and I can't wait to taste it............and several others. Thanks folks. The Mudcat is amazing.

Then there's Lobster Chili but that may be going over the top for the judges.

Mick, you ought to pick a Michigan name for your chili, something like Bad Ax Chili or Climax Chili. There're some great choices.

Charley, I made a seafood chili last time with shrimp, lobster, scallops and fish. Won hands down.

Climax Chili.......I love it. For those that don't know, Climax is a wee town just east of Kalamazoo on I94.

Mick - How many folks at this cook-off use beans ? There are a lot of folks here in Texas that say beans don't belong in Chili.

For a Chili name how about "Escape From Escanaba" ??

FAMOUS...... Wisconsin Chili Recipe

2 pounds hamburger....brown and drain
Add all these ingredients and simmer .
1 can tomato soup
2 qts. water
1 can tomato sauce
1 quart tomato juice
3 cans chili beans...don't drain
1/2 cup of worscheshire sauce
1 large onion diced
celery diced
then....when finished....add
1/2 pound narrow egg noodles
Chili powder to taste

I always use fresh tomatos. In a cook off that might be hard because it takes so long to cook. I don't have a recipe though but the basics,
Fresh tomatos (no skins)-While those are simmering down,
Brown hamburger and I add onion, celery, bell pepper and chopped garlic to soften with meat.(lots of garlic, at least a bulb)
Add to tomatos, with meat and veggies, cumin, oregeno,a dried hot pepper blend I make with an assortment of hot peppers (You could just use a dried hot pepper flake of your choice), salt, pepper, chili powder, tabasco sauce, worcestershire sauce, small amount of sugar and beans.(I use kidney)
I add spices a little at a time and just keep adding as I go until it's just right.
I have heard some people add grape jelly for a sweetener. I have tried that once but I think I used too much because it was way to sweet.
I freeze my tomatos so when I make chili I always have them and they are easier to work with than dealing with fresh peeling, canning, etc.
I don't OD on anything hot because than too many people can't eat it.

I was first runner up, and the recipe I used was a combination of several ideas I got here. The chocolate is a gem that I had heard before, but never used. It gives a wonderful little boost to the taste.

Have you tried mole? That's a Mexican sauce that has chocolate, but it isn't sweet and doesn't taste like candy chocolate.
