I worked with a British traditional dance team at the Museum of Appalachia last year (I'm a banjo player), and one of them told me that "Why Paddy's not at work today" was originally performed as a music hall recitative many many years ago. I have forgotten the music-hall comedian's name, but my British friend seemed to think that it was a very old piece.
