Sprinkle your roughly cut spuds with good olive oil shake them around in the roasting dish till they are coated with the oil, sprinkle with dried rosemary and sea salt shake again, and then roast, also nice if you add some rough cut red onions.

Here's a recipe for a great potluck dish.

Grate boiled potatoes
Add sour cream, grated cheddar cheese and onion.

Bake at 350 for about 40 minutes.

The onions can be either green or the brown cooking onions, diced.

Refridgerate overnight.      

Yummy!

Lately I've been fixing the potatoes by giving them a quick scrub, then cutting them unpeeled into chunks (I usually slice across the potato for about a 1/2 inch or less thick slices, then cut that slice into two or three chunks) and sautee them in some olive oil in a skillet. Add fresh garlic, a little onion (or sprinkle powder in a real hurry) and add some chives at the end along with a little salt. Comes out great.

Now try all of the above, but with spring garlic... Tastes to die for. Hard to find in most places, but ask nevertheless, you never know. And if all else fails, you can grow some in a flowerbox.

I add them to the cooked mash, with a splash of milk and a dollop of butter. Delicious.

I saute half the onions in butter, stir into mashed. Then add the other half raw.

I cook the spuds in a pressure cooker (with a clove of garlic), empty into a pan add the spring onions (and for me black pepper and mature Cheddar cheese) and mash.
Have it with spring greens cooked with olive oil and a little water till dry.
Now add grilled smoked mackerel and your away with the Gods.

I've done it both ways - but think the latter (adding after mashed) is preferable in taste and texture.

i'd always make the mash first..


then add extra ingredients..

and reheat extra few minutes if required..

that way wont over cook and lose all vitamins and minerals..


oh and dont peel the spuds either..


nows the time of year me & the mrs love spoiling ouselves with tasty
spicy mash taters
to go with our sausages and bacon gut busting weekend treats..

I would add after mashing, then cook a little more. Just my preference...


And consider sliced leeks, when you can get them... Best if they are sauted ( a little) before adding to the potatoes.

I want to cook mash potato mushed up with spring onions.
do you put the onions in with spuds as you boil them , or do you create the mash and then put the onions in?
