I heat the base in the frypan with no oil on a medium heat so that it goes crispy, and when it is hot but not burned I heat it for a minute at a time - usually only about two minutes - on medium setting in the microwave. Having said that, I don't know why but I like eating cold pizza. And no, pfr, it's not hangover-related. I just like the taste for some reason. If there are still leftovers I freeze them with the slices laid out in the bags so that I can take as few or as many slices as I need, defrost them gently in the microwave and then do the frypan and then microwave trick. |

Helen's suggestion above, using a frying pan followed by a quick blast in the microwave, is probably easiest. If you have a barbecue grill basket, (the type that clamps the food in place), and the toppings are not too moist or loose, you could crisp the base under a grill, set on high, before flipping it over and heating the top on a moderate setting. We don't have salami or pepperoni or any fatty meats on it. We come up with some good topping combinations too, e.g. smoked salmon with sundried tomatoes, capers, capsicum etc on a thin base of sour cream, or my fave has always been ham, capsicum, olives, and onion with a conservative amount of mozzarella on a tomato or pesto base. Pesto is better, IMHO. It still takes a bit of faffing about to get the toppings sorted, especially if we are making more than one type at the same time. We also go to a cafe sometimes which makes good pizzas. Not top of the range but very good toppings and flavours, e.g. chicken breast with sundried tomatoes, mushrooms, onion on a barbecue base. I don't really understand why pizza is considered unhealthy if you have good fresh toppings and not too much fatty processed meat but I don't go to the franchise pizza places so I'm not really eating those kind. I think that buying good pizza is a good alternative to having to cook all the time. I can think of worse, less healthy alternatives like deep fried beige food with a few sides of deep fried beige food and a brown fizzy drink or six. Thanks for the song link Joe. |

Mush the inside a bit with a fork. Sprinkle in a generous amount of strong cheddar, grated. Add a small knob of butter. Mush it all in. Close up the the two halves. Microwave for at least two and a half minutes on high. Maybe more if it's a big spud. Voila. A breakfast that will fortify you until lunchtime. Even better if you can incorporate a bit of accidentally leftover crispy bacon. |
