From: Jeri Date: 17 May 01 - 05:40 PM Back before there was salmonella in eggs (and I mean salmonella in the eggs prior to a human doing something to put it there), you could eat runny eggs with no danger. There were no pasteurized egg products in stores, because we didn't need them. This comes from the FDA "Bad Bug Book" chapter on Salmonella: Various Salmonella species have long been isolated from the outside of egg shells. The present situation with S. enteritidis is complicated by the presence of the organism inside the egg, in the yolk. This and other information strongly suggest vertical transmission, i.e., deposition of the organism in the yolk by an infected layer hen prior to shell deposition. Foods other than eggs have also caused outbreaks of S. enteritidis disease.
And from the same page: S. enteritidis outbreaks continue to occur in the U.S. (Table 1). The CDC estimates that 75% of those outbreaks are associated with the consumption of raw or inadequately cooked Grade A whole shell eggs. The U.S. Department of Agriculture published Regulations on February 16, 1990, in the Federal Register establishing a mandatory testing program for egg-producing breeder flocks and commercial flocks implicated in causing human illnesses. This testing should lead to a reduction in cases of gastroenteritis caused by the consumption of Grade A whole shell eggs. Basically, salmonella can get into the yolks of the eggs before they're laid, and this is a somewhat recent development. It's advised to thoroughly cook your eggs, yolk and all. I'm not sure exactly when this problem started to become apparent, but I believe it was in the mid to late 80's |

The strange thing is that unless I buy in large quantities, the eggs have generally disappeared........ They were stored at room temperature in our basement - probably about 55 degrees F. Never had a single one go bad. |

But - one of the ways people preserved eggs before refrigeration was putting them in a jar with unslaked lime & water. The raw eggs will keep for a good while, but I've heard it turns the yolks red. Hmm. I have always heard that thing about not washing the fresh eggs so they will keep. My stepmother does usually wash hers and put them in the fridge. To any of you who have never had a home-grown egg... well, you are missing something. They are nothing like those grocery store eggs with thin little shells and pale yellow yolks. Find someone who has hens and get yourself a treat. |

You can easily tell by the amount of air inside the shell--eggs get dryer in cold storage; they don't start out with that air bubble. How else do you suppose they keep the shelves filled with eggs, even during the chickens' molting season? (chickens don't lay during their molt) Of course, lots of factory farms don't let their chickens molt, but that's only one of a great many inhumane practices that transpire in those critter concentration camps (a topic for a different thread, too) But if your eggs have already spent weeks or months in industrial cold storage, another week in your own fridge isn't going to hurt them any. I have kept hens for years and fresh eggs last 3-4 weeks with no improvement by refrigeration. Salmonella don't get into eggs unless you feed the hens on mouldy dead chickens, it is on the shells. If you refrigerate, you risk it penetrating the shells with the water which inevitably hangs around in fridges. For the same reason, you should never wash eggs either. How do you think we kept eggs before there were fridges?

My stepmother has Aracaunas that lay green eggs. So yes, I have eaten green eggs and ham. (it's just the shell that's green, really!) Three bored, growing teens transplanted to the country, one pastor's salary-- they got chores, and eggs. Boys built the shed. So funny. Nails and curses flying. The cords fasten the yolk in there, one cord per end, suspending it in the middle, so it floats whole, protected in the shock-absorbing whites. The fertilized cell grows sort of on the yolk. If the yolk breaks up inside the shell, the chick cannot grow a belly around the yolk and, eventually, absorb it all. The cords are very tough when the egg is fresh. When the egg is not fresh, they break down a lot and are much less noticeable. Also the fresher the egg, the more runny when raw-- the yolks that break and the whites that run, when you open the shell with some care, are very old eggs and good only for thorough cooking. Since the older the egg, the more the salmonella in there has multiplied, even if refrigerated. Never leave an egg wet for more than 3 minutes if washing. After that the soap or bleach goes through the shell. Or maybe it's 30 seconds. Whatever! ~S~ |
